How to choose delicious and non-fibrous tarot
- Good tarot will have a round shape, rough skin, and still have soil on it, with the stem on top still firmly attached to the tuber, not cut off.
- Choose tarot that is of medium size, feels light when held, and has many indentations on the outside, also known as “eyes” of the tarot.
- Avoid buying tarot with pale colors inside, smooth skin, and few indentations as these are not good quality.

How to make Taro Ice Cream

Prepare and steam the taro
After purchasing the taro, you should brush off all the dirt on the outside and peel off the skin. It is better not to wash the skin thoroughly but to peel the taro while there is still a bit of dirt; this will prevent itching while peeling.
Next, wash thoroughly and use a knife to cut the taro into small, bite-sized pieces.
After preparation, place the taro in the steamer and steam for about 30 minutes over medium heat until the taro turns a deep purple color and is completely soft.

Blend the taro
After steaming the taro, put it into a blender. Next, add 220ml of unsweetened fresh milk, 100gr of sugar, and 40gr of condensed milk.
Close the lid and blend the mixture for about 1 – 3 minutes until the mixture is smooth and slightly thickened.

Mix the taro milk cream mixture
Pour 200ml of whipping cream into a bowl and use a hand mixer to beat at medium speed for about 5 minutes, until the whipping cream doubles in volume.
Next, pour the blended taro mixture into the bowl of whipping cream and use the hand mixer to blend the two mixtures together.
Then, add 2 tablespoons of beetroot juice to the mixture and continue to mix until the mixture turns a beautiful pinkish purple.

Pour into molds and freeze
After mixing the mixture well, pour the cream into the mold, use a ladle to stir evenly for a flat cream surface, then place it in the freezer for about 6 – 8 hours to let the cream freeze.

After the ice cream has frozen, take it out and scoop it onto a plate, sprinkle a little crushed peanuts on top, and you have a delicious ice cream ready to enjoy right away.
