How to choose delicious plums

How to make Plum Ice Cream without whipping cream

Soak cashew nuts
Put 150g of fresh cashew nuts into a bowl of water and soak overnight.

Boil cashew nuts
After soaking, strain the cashew nuts and discard the water.
Add the cashew nuts into a pot with 100ml of water and boil for 10 minutes.

Cooking the mulberry jam
800g of mulberries washed clean and cut in half with a knife to remove the seeds.
Boil 80ml of water and 100g of sugar over medium heat. When the sugar has completely dissolved, add the cut mulberries along with 5g of tapioca starch, 10g of apple cider vinegar, and 10g of cane sugar, cooking over low heat until the mixture thickens.

Blending the ingredients
Add the cooked cashews, 220g of coconut cream, the cooked mulberries, 2g of salt, and 5g of vanilla extract into a blender and blend until the mixture has a smooth texture.

Chilling the mixture
Pour the mixture into a plastic or glass container, using a spatula to smooth the surface of the cream. You can decorate it with dried rose petals and chill the cream for at least 6 hours.

When the mixture has frozen into ice cream, take it out and wait for 2 minutes. Use an ice cream scoop to serve it in a bowl and enjoy. The ice cream has a fragrant mulberry scent, rich coconut flavor, and cashew bits. It melts in your mouth instantly and is incredibly refreshing.
