  • You should choose black carp with clear eyes, pink gills, and shiny scales.
  • Fresh black carp will have good elasticity when pressed with your finger, the mouth is closed, with a characteristic fishy smell.
  • Avoid buying those with unusual skin color, unpleasant fishy smell, soft and mushy flesh, open mouths, or swollen bellies as these indicate the fish is no longer fresh.

How to Make Black Carp Floss

  • Prepare Ingredients

    For lemongrass, wash it thoroughly, then crush it and use a knife to cut it in half.

    To eliminate the fishy smell of the black carp, soak the fish in diluted salt water for about 15 minutes.

    After that, rinse it thoroughly with fresh water several times, and place it in a basket to drain.

    Effective Tips to Remove Fishy Smell from Black Carp:

    • Method 1: Use a mixture of lemon and salt to rub on the surface of the fish for about 5 – 10 minutes, then rinse with water.
    • Method 2: Use a mixture of vinegar, white wine, and a little salt to wash the fish, then soak the fish in that mixture for about 5 minutes before rinsing thoroughly with water.
    • Method 3: Soak the fish in unsweetened milk for about 10 minutes, then rinse with water and drain before cooking.

  • Boil fish

    First, you place lemongrass at the bottom of the pot and then add the fish piece on top. Add 2 teaspoons of fish sauce and 20ml of water into the pot, then put the pot on the stove.

    Simmer on low heat for about 15 minutes. When you see the water in the pot has reduced and the fish is cooked, turn off the stove and transfer the fish to a plate.

    When the fish has cooled, use chopsticks to remove the fish bones, setting the fish meat aside on a plate.

    Next, place a pan on the stove, add 1 tablespoon of gac oil, and when the oil is hot, add the fish meat and stir-fry on low heat to dry the fish meat faster.

    Add 1 teaspoon of fish sauce and 1 teaspoon of monosodium glutamate to the pan and continue to stir well.
