  • Prepare the pork

    Wash the pork with water, then to remove the smell, use 1 teaspoon of salt and rub it directly onto the meat.

    After that, rinse with clean water and use paper towels to dry the meat. Once the meat is dry, use a knife to cut it into thin, bite-sized pieces.

    • Method 1: Soak the pork belly in diluted salt water for 2 – 3 minutes, then take it out, rinse with clean water, and let it drain.
    • Method 2: Use salt or lemon juice to rub onto the meat, then rinse with clean water and let it drain.
    • Method 3: You can use crushed ginger mixed with alcohol to wash the meat. This will effectively remove the smell.
    • Method 4: Additionally, you can blanch the meat in boiling water for 3 minutes, then rinse with clean water.

    To remove the salty brine from the pickled mustard greens, wash and squeeze the water out about 3 – 4 times with clean water, then let it drain.

  • Marinate the meat

    Put 300g of sliced pork into a bowl with sliced shallots and 1 teaspoon of seasoning, mix well and marinate for 15 minutes for the meat to absorb the spices evenly.

    Place a pan on the stove, add 2 teaspoons of cooking oil, heat over medium heat until the oil is hot, then add minced garlic and stir continuously until the garlic turns golden and fragrant. Then add the meat and stir-fry for about 2 minutes until the meat is firm, then add the pickled mustard greens and stir well.

    Next, add the spice mixture including: 3 teaspoons of sugar, 2 teaspoons of fish sauce, 1 teaspoon of seasoning powder, and 1/3 teaspoon of monosodium glutamate, stir-fry for about 5 minutes, then pour in a little water to make the meat more tender, cover and cook on low heat for 10 minutes, taste and adjust the seasoning to your liking, then turn off the heat.

    Transfer the meat and pickled mustard greens to a plate and sprinkle a little ground pepper for aroma to finish.
