How to choose fresh bitter gourd
- Fresh bitter gourd has a long, balanced shape, moderate size, not too large, with a color leaning towards light green, feels firm and heavy when held, and has a certain softness of the skin.
- If the stem of the bitter gourd looks fresh and has sap oozing out, it indicates the gourd was recently harvested and is sweeter.
- Avoid choosing crooked bitter gourds, those with bee stings, or those that feel too hard when pressed, as they may be hollow and spongy, indicating they are overripe and not tasty.
How to choose delicious, quality shrimp
- Fresh shrimp have a transparent outer shell, straight shape, slightly curled tail, and the head, tail, and legs are firmly attached to the shrimp body. In addition, when held, the shrimp feel firm and do not have a foul smell.

Prepare the ingredients
Shrimp should be cleaned, peeled, and the black vein on the back should be removed. Next, place the shrimp on the cutting board and chop finely.
Quick method to clean and remove shrimp veins- To quickly remove the shrimp vein, make a cut along the back of the shrimp and use the pointed end of a toothpick to pull the vein out.
- Alternatively, you can bend the head of the shrimp and gently squeeze from the tail to expose the shrimp’s intestine, then hold the intestine and pull gently to remove the vein.
Bitter gourd should be peeled and washed. If you want the bitter gourd to be crisper when steamed, you can use a knife to scrape off the hard outer layer. Next, cut the bitter gourd into slices about 2 finger widths thick and use a spoon or knife to scoop out the seeds.
Green onions should have their roots and wilted leaves removed, washed clean, and then chopped finely.

Marinate and stuff the filling
Crush the tofu and put it in a bowl along with minced shrimp, chopped green onions, 1/2 teaspoon of seasoning, 1/3 teaspoon of monosodium glutamate, 1/2 teaspoon of sugar, and 1/2 teaspoon of ground pepper. Mix well and let it sit for about 10 minutes for the filling to absorb the spices.
After marinating, take an adequate amount of filling and stuff it into the bitter melon sections, pressing it firmly. Repeat this for all the ingredients, then place the stuffed bitter melon on a large plate to steam.
