How to choose fresh and delicious beets

  • You should choose beets that are still fresh and in the main harvest season from June to November to avoid beets being forced to ripen.
  • Fresh and delicious beets feel firm when held, their skin is taut, and there are no signs of bruising or damage on the surface.
  • Avoid buying beets that feel soft, slimy, and have a foul smell, as these are signs of poor quality beets, which will affect the taste of the dish.

  • Prepare the beetroot

    When you buy beetroot, peel it, wash it thoroughly with water, then use a knife to cut it into thin slices.

    Next, soak the sliced beetroot in a mixture of diluted salt water and 50ml of vinegar for about 30 minutes, then take it out, wash it clean again, and let it drain.

    Tip:
    • You can cut the beetroot into flower shapes to make the jam more beautiful!
    • Soaking the beetroot in vinegar water will help prevent it from browning and enhance its color.

  • Mix the sugar

    Place the prepared beetroot into a clean bowl, then add 500g of sugar. Mix well so that the sugar absorbs into the beetroot, then marinate the mixture overnight.

  • Making jam

    Place a pan on the stove, add the sugar-marinated beetroot into the pan and cook over medium heat. During cooking, make sure to stir the jam regularly.

    Cook until the sugar gradually reduces, then lower the heat and stir continuously until the sugar crystallizes and the jam dries out, and you’re done.
