How to Make Taiwanese Sweet Soup

Steam and Mash the Potatoes
After peeling, steam the taro, yellow sweet potato, and purple sweet potato until cooked (about 25-30 minutes). Then, transfer the potatoes to a bowl and mash each type separately.
Next, add 60g of tapioca flour to each type, 30 gr of sugar (except for the yellow sweet potato, which doesn’t need sugar), and water, then knead until it forms a smooth, elastic dough.

Shaping the dough
At this point, you will have three bowls of dough in three different colors. Roll each piece of dough into a long oval shape and then cut into pieces about 1-1.5cm.
Then put a pot of boiling water on the stove and boil the dough balls until they turn translucent and float to the surface, then remove them to a bowl of ice water for about 10 minutes.

Making ginger syrup and cao quy linh
Put 300 grams of sugar into a pot, add 150 grams of water, bring to a boil, then add a few thin slices of ginger, and turn off the heat.
Add 1 liter of water to the pot, add 150 grams of pre-mixed cao quy linh, stir well, bring to a boil, then reduce the heat and simmer for about 5 minutes before turning off the heat, pour into a mold and wait for it to cool and set (you can put it in the fridge to set faster).
