How to make Milo pearls with arrowroot starch

  • Grind the arrowroot starch

    Put the arrowroot starch into a multifunctional blender, turn the machine to the highest setting to grind the starch finely.

    After the starch has been ground into a fine powder, transfer it to a large stainless steel bowl to prepare for kneading, making sure to reserve about 1 tablespoon of starch for dusting.

  • Cook the Milo milk

    Place a pot on the stove, add 110ml of purified water, and bring to a boil.

    Next, add the Milo powder package and stir well to dissolve the Milo powder evenly in the water, and when the water comes to a boil again, turn off the heat.

  • Kneading the dough

    First, scoop a little hot milo milk into the prepared cassava flour.

    After the dough starts to cool, use your hands to knead it thoroughly until it becomes smooth and no longer sticks to your hands.

    Tip:
    • To ensure the milk and flour are smooth and do not separate, use a spoon to scoop and stir continuously.
    • While the dough is still hot, you can use a spoon to knead it, pressing evenly so that the dough becomes more pliable and smoother.
    • To prevent the dough from sticking to your hands, occasionally add a little dusting flour during the kneading process.

  • Shaping

    After kneading the dough, cut the dough block into 4 equal parts. Take each part one by one to knead and roll the dough on the cutting board into long strands about 5cm – 10cm, then cut them in half and place them parallel to each other.

    Use a knife to cut the dough into small pieces about 1cm – 2cm, roll them in the palm of your hand to shape them into tapioca pearls, and finally place the pearls into the remaining dusting flour, shaking evenly to coat them well.

    Repeat the above steps for the remaining 3 parts of dough.

    Tip: To prevent the dough from drying out, cover the remaining dough parts with a lid or plate while kneading.

  • Boiling tapioca pearls

    Place a pot on the stove, boil 400ml of water. When the water is boiling, add the tapioca pearls to the pot and stir gently to prevent the mixture from sticking to the bottom for about 1 minute, then cover the pot to cook the pearls.

    When the tapioca pearls float to the surface, reduce the heat to the lowest setting and continue cooking for about 20 – 25 minutes. Finally, turn off the heat and let the tapioca pearls sit in the pot for about 20 minutes to absorb the flavor, becoming softer and tastier.

    Transfer the tapioca pearls to a bowl of hot water for about 2 minutes, add 50g of sugar, and stir until the sugar completely dissolves so that the tapioca pearls are evenly sweetened.
