How to make vegetarian Tây Ninh chili salt

Prepare the ingredients
Wash the horn chili and remove the stem, then slice it lengthwise, remove all the seeds, and chop finely.
Peel the garlic and chop it finely.
Peel the carrot and chop it finely.
Clean the straw mushrooms by removing the stem and soaking them in diluted saltwater for 10 minutes to clean. Drain and chop finely.

Blend the mixture
Add 100 grams of coarse salt, 1 teaspoon of sugar, 1 teaspoon of vegetarian seasoning, and 3 teaspoons of monosodium glutamate to a bowl and mix well.
Put all the ingredients including horn chili, garlic, mushrooms, and carrots into a blender and blend the mixture until very fine.
Add the blended chili-garlic mixture to the salt mixture and mix well. Then briefly blend this mixture in the blender.
Just blend the salt mixture briefly, do not blend it too finely, because when finely blended, the salt will clump together when roasted, and the blended mixture will contain a lot of water, which will take longer to roast. -
Roasting Salt
Add the entire mixture just ground into the pan. Roast over low heat for 3 – 4 minutes until the salt is completely dry.
When the roasted salt clumps into small dry pieces, transfer all the salt into a pestle and grind it finely.
After grinding the salt, roast it again for another 4 – 5 minutes over low heat to ensure the salt is completely dry. Turn off the heat and store the salt in a container for future use.
