Beef tenderloin 300 gr Garlic 2 cloves Fresh lemongrass 1 stalk Ginger 1 piece (small) Rosemary 2 sprigs Oyster sauce 2 teaspoons Olive oil 1 tablespoon Five-spice powder 2 teaspoons Salt/ ground pepper a little

How to choose fresh and delicious beef tenderloin

  • You should prioritize choosing pieces of beef that have a bright red color interspersed with white fat lines and the fat part has a bright yellow color.
  • For the pan-searing method, you should choose pieces of beef tenderloin that have marbled fat inside; when cooked, the fat will render out, making the meat rich and not dry.
  • Avoid buying pieces of beef tenderloin that are dark red with dark yellow fat. Spoiled or old beef usually has white spots on the meat, feels mushy and sticky to the touch, and may even have an unusual odor.

  • Prepare the ingredients

    After purchasing, the beef tenderloin only needs to be washed clean, then cut into pieces about one and a half finger lengths thick, and use a paper towel to dry the meat thoroughly.

    Wash 2 cloves of garlic, 1 stalk of fresh lemongrass, and a small piece of ginger, then peel the garlic and scrape the skin off the ginger. After that, smash and finely chop all the garlic, fresh lemongrass, and ginger.

  • Marinate the beef tenderloin

    Place the piece of beef into a bowl or tray, then marinate the meat with a mixture of seasonings including: 2 spoons of oyster sauce, 2 spoons of five-spice powder, a little salt, a little ground pepper, and a mixture of minced garlic, fresh lemongrass, and ginger.

    Put on nylon gloves and gently massage the meat to evenly coat it with the seasonings, then put it in the fridge refrigerator to marinate for about 30 minutes so that the beef absorbs the flavors.

  • Pan-sear the beef tenderloin

    Place a pan on the stove and heat 1 tablespoon of olive oil over low heat. After about 3 minutes, add the beef and pan-sear each side for about 6 minutes, placing 2 sprigs of washed rosemary on top to enhance the aroma.

    When the beef is evenly cooked on both sides, use scissors to cut the meat into bite-sized pieces and arrange them on a plate, sprinkle with a little ground pepper, and enjoy.
