How to choose fresh ingredients
How to choose fresh pork ribs:
- To choose fresh pork, observe the outside of the meat, select pieces that are dry, with even fibers, and firm texture.
- Choose pieces that have elasticity; when you touch the meat, you should feel the elasticity, and when you remove your hand, it should not leave a dent.
- Do not choose pieces that are soft, have a foul smell, are too red in color, and do not bounce back when touched, leaving a dent.
How to choose fresh and delicious taro:
- To select good taro, observe the tuber and choose those that are evenly round, shaped like a chicken egg. The outside has a rough skin, with many roots and dirt still clinging to the skin. The size of the taro should be medium, not too large and not too small.
- You should choose tubers with many indentations; the more indentations, the more delicious and creamy the taro.
- Do not choose tubers that feel heavy, or those that are too large or too small.
