  • Fresh and pure soft tofu will have a fragrant aroma and the characteristic creamy taste of soybeans. In contrast, tofu that contains impurities will emit a faint smell of lime, and when eaten, it will taste bland, dry, and spongy.
  • Avoid selecting pieces of soft tofu that are too hard or extremely firm, as they may contain a lot of gypsum. Avoid choosing pieces that are moldy or have strange smells.

How to make Soft Tofu with Tomato Sauce

  • Prepare the ingredients

    Wash the tomatoes, remove the stem, and dice them. Clean the green onions and chop them finely.

    Next, soak the tofu in warm water for 10 minutes, then rinse it with water and cut it into round slices about 1/4 finger thick.

    Place a pan on the stove, add all the chopped shallots and sauté until fragrant and golden with 1 tablespoon of cooking oil. Once the shallots are aromatic, add the chopped tomatoes and stir-fry briefly over high heat.

    Then, add 1 teaspoon of salt and 1/2 cup of water (rice bowl) into the pan, cover, and cook on low heat until the tomatoes soften quickly.

    After 3 – 5 minutes, add 1 spoon of fish sauce, 1/2 teaspoon of ground pepper, and 1 teaspoon of monosodium glutamate. Season a bit more strongly so that when cooked with the tofu, the tofu absorbs the flavors just right.

    Add 1 tablespoon of cornstarch mixed with 2 tablespoons of water into the pan and stir well. Next, gently add the soft tofu into the simmering sauce mixture for another 2 – 3 minutes to allow the tofu to soften and absorb the flavors. Finally, sprinkle chopped green onions on top, adjust the seasoning to taste, and turn off the stove.

  • Prepare the ingredients

    Shiitake mushrooms you bought, cut off the stems and soak in diluted salt water for 10 – 15 minutes, rinse with water and then cut into small pieces.

    Wash tomatoes and bell peppers several times with water, drain and then cut off both ends, remove the seeds inside and dice.

    Soak soft tofu in warm water for about 10 minutes, then rinse with water, then cut into round slices about 1/4 inch thick.
