How to make Thai pancakes (Khanom Buang)

Prepare the eggshells
After purchasing the eggs, wash them thoroughly, then separate and keep only 3 egg whites, while using both the yolk and white from the remaining egg in another bowl and keeping the shells.
Next, put the eggshells into a mortar, pound them until they turn into fine powder, and add 125ml of water, then stir well.

Whip the egg whites
In this step, you add 3 egg whites and 50g of sugar into a medium bowl and use a hand mixer to beat for about 5 – 7 minutes until the mixture becomes fluffy and forms a cream.

Mix the batter
First, you strain all the water from the egg shells (only take the water) and put it into a separate large bowl.
Then, add 50g of mung bean flour, 100g of rice flour, 1 egg, 150g of sugar, and 1/2 tablespoon of cocoa powder into the bowl with the egg shell water, and mix well with a whisk until the mixture is smooth and free of lumps.

Baking the Pancakes
In this step, you place a pan on the stove and heat it over medium heat for about 30 seconds. Then, you scoop a ladle of batter into the pan and spread it evenly into a round shape.
About 20 seconds later, when the pancake is cooked, you add about 1 teaspoon of whipped egg white cream along with a little Foi Thong on top of the pancake.
After about 1-2 minutes, the pancake’s crust will turn golden and crispy, you gently fold the pancake in half and remove it from the pan. You repeat the process for the remaining pancakes similarly.
