How to choose good shrimp
- You should choose live shrimp that are bright in color, with their tails curled, the back of the shrimp naturally curved and not straight, and the head of the shrimp attached to the body; avoid shrimp with heads separated from their bodies.
- Avoid soft, mushy shrimp, those that are white are spoiled, or shrimp with tails spread out like a fan, swollen bellies and backs, with liquid seeping from the segments, and pale, inconsistent colors indicating the shrimp have been injected with chemicals.
How to choose fresh cabbage
- Choose medium-sized cabbage, round in shape, with outer leaves not bruised or torn.
- Cabbage should have uniform color and a natural fragrant smell, without any strange odors.
- When holding cabbage, it should feel heavy and firm, indicating good quality.
- Avoid light or overly large cabbages, as they will not taste good when eaten.

How to Make Thanh Hoa Fried Shrimp Cake

Grind the rice flour mixture
Measure 300g of rice into a bowl, rinse thoroughly with water, then add water to soak the rice overnight. Next, drain the rice, rinse it again with water, and let it dry.
Put the rice into a blender with 400ml of water and blend until smooth.
Then add 50g of crispy flour, 1/2 teaspoon of salt, 1 tablespoon of cooking oil to the blender and blend for another 2 minutes until the mixture is well combined, then let the batter rest for 15 minutes.

Prepare and stir-fry the shrimp
To reduce the fishy smell of the shrimp, soak them in diluted salt water for about 10 minutes after buying, then rinse the shrimp under clean water and let them drain.
Heat a pan over medium heat, add 2 tablespoons of cooking oil, sauté minced garlic until fragrant, then add the shrimp and stir-fry together.
Season the stir-fried shrimp with 2 teaspoons of seasoning powder, 1 tablespoon of fish sauce, stir well to let the shrimp absorb the spices, and after about 5 minutes the shrimp will be cooked, taste again and adjust the seasoning, then turn off the heat.

Prepare cabbage and water spinach
Slice the cabbage thinly with a knife, wash thoroughly with water, and let it drain.
For water spinach, remove some leaves, cut the stems into pieces about 2 finger lengths, wash thoroughly with water, and let it drain.

Pour the pancake
Heat a pan over medium heat, add a layer of cooking oil to the pan, then scoop a ladle of batter into the pan.
Gently shake the pan to spread the batter evenly across the surface.
Next, add 2 tablespoons of stir-fried shrimp, a little cabbage, and water spinach, then cover the lid for about 2 minutes until the batter is cooked. Open the lid, fold the pancake, and place it on a plate.
