Making the cake base
Dissolve 2 teaspoons of instant coffee powder in 30ml of hot water and let it cool.
Add 10 dried dates into a blender and blend at medium speed until the dates are finely chopped and stick together in a mass, then turn off the machine.
Then, use your hands to break the mass of dates into small pieces and put them back into the blender, add the brewed coffee, 1/2 teaspoon of salt, 1 teaspoon of vanilla extract, and 120g of almond flour, then blend at high speed until the mixture is well combined.

Tip:
- Use 80ml of honey if you are using honey instead of maple syrup.
- Using soy milk to make tofu cream will make the cream thicker and more fragrant compared to other nut milks or fresh milk.
- After blending, scoop the cream to check; if the tofu cream mixture has not fully blended, use a spoon to mash it smooth and blend again until completely fine.

Prepare 6 small wide-mouthed glass cups and add 1 tablespoon of the blended date mixture to each cup.
