How to choose fresh chicken wings

  • When selecting chicken, observe the external color, choose pieces that are bright in color, with skin that is not bruised or swollen. The skin and meat should not be separated or too loose.
  • Gently touch the chicken; choose those that are firm, not too soft, and do not leave a dent when pressed.
  • Do not choose chicken that has a foul smell, is slimy on the outside, has purple skin, or mushy meat.
Chicken broth: Chicken broth is an essential ingredient for some nutritious dishes, made from chicken bones, with a sweet, delicious, and rich flavor.

  • Debone the chicken

    After purchasing the chicken, remove any remaining feathers, use diluted salt water to wash it, then rinse it with clean water.

    Cut the chicken wings into 3 segments at the joints. Use the tip of the scissors to carefully detach the meat close to the bone. Next, gently pull the chicken bones out.

  • Shape the fake pork ribs chicken

    After purchasing the sugarcane, peel it clean, wash it thoroughly, and then cut it into small pieces about 5 cm long to mimic pork bones.

    Next, insert 2 sugarcane sticks into the deboned chicken piece to shape it like ribs.

  • Fry the fake chicken ribs

    Place a pan on the stove, add 2 tablespoons of cooking oil and heat it, then add the fake chicken ribs and fry over medium heat for 10 minutes. After 5 minutes, when the bottom surface turns golden, flip the fake chicken ribs to ensure they are evenly golden.

    When the fake chicken ribs are evenly golden on both sides, add 3 tablespoons of soy sauce, 1 tablespoon of oyster sauce, 1 tablespoon of honey, 1 tablespoon of chili paste, and 100 ml of chicken broth.

    Stir well to let the fake chicken ribs absorb the seasoning for 15 minutes over low heat. When the sauce thickens, you can taste and adjust the seasoning to your preference, then turn off the heat.
