Red bell pepper 1 piece Yellow bell pepper 1 piece Green bell pepper 1 piece Celery 3 stalks Carrot 1/2 piece Dried snow fungus 100 gr Tofu 1 piece Thai basil a little Lime juice 1 tablespoon Chopped chili 1 tablespoon Roasted sesame a little Fried shallots a little Vegetarian fish sauce 4 tablespoons Brown sugar 2 tablespoons Rice vinegar 2 tablespoons Salt a little Cooking oil 100 ml

How to prepare Bell Pepper and Celery Salad

  • Prepare the ingredients

    Wash the celery, peel it, cut it in half, and then shred it into bite-sized pieces. The carrot should also be washed, peeled, and cut into thin strips. Soak the snow mushrooms for about 15 minutes until soft, then remove the stems and chop them small. Pick the yellow coriander leaves, wash them clean, and chop them small.

    Wash the yellow, red, and green bell peppers, cut them in half, and remove all the seeds. Then, put all the bell peppers into the pan and stir-fry over medium heat for about 1 – 2 minutes.

    After stir-frying the red and yellow bell peppers, slice them thinly. The green bell pepper should be blended smoothly using a blender.

    Wash the tofu, cut it into slices about 1/2 finger thick, then fry it and cut it into small strips.

  • Make the sauce

    Add 4 tablespoons of vegetarian fish sauce, 2 tablespoons of brown sugar, 1 tablespoon of green bell pepper, 2 tablespoons of rice vinegar, 1 tablespoon of tangerine juice, 1 tablespoon of minced chili, and 1/4 teaspoon of salt into a bowl, then mix well.

  • Mix the salad

    In a bowl, add in sequence red bell pepper, yellow bell pepper, celery, carrot, snow mushrooms, and 1/2 of the sauce, then mix well and let sit for about 5 minutes for the salad to absorb the seasoning.

    Next, add tofu, fried shallots, coriander, the remaining sauce, and a bit of toasted sesame seeds, then mix everything together.

    Finally, simply serve the dish on a plate and garnish on top with a bit of herbs and toasted sesame seeds.
