How to Prepare Sour Pickled Young Watermelon Rind

  • Prepare the Watermelon Rind

    First, wash 500g of watermelon rind thoroughly and let it drain. Then, use a knife to cleanly remove the green outer skin and any leftover flesh, then cut it into thin strips.

    Next, place all the cut watermelon rind into a bowl and add 1 teaspoon of salt, mix well with your hands, and let it marinate for 30 minutes.

    After that, drain the water and rinse 4 – 5 times with clean water. Finally, use a clean towel to squeeze out the excess water from the rind, then leave it in the sun for about 1 – 2 hours.

  • Prepare the fish sauce with sugar

    Put a pot on the stove, add 2 tablespoons of sugar, 3 tablespoons of water, and 1/2 teaspoon of seasoning powder, and cook over low heat for about 3 – 5 minutes.

    Stir well until the sugar dissolves, when the fish sauce boils, turn off the heat, pour it into a bowl, then add 1 teaspoon of minced garlic and 1 teaspoon of minced chili, stir well, and let it cool completely.

    Finally, take a food container, add all the drained watermelon rind and the bowl of fish sauce mixture, and place it in the refrigerator for about 2 – 3 hours, and it’s ready to enjoy!
