How to choose fresh whole chicken
- To select good chicken, you should pay attention to the size of the chicken. Choose chickens that are of moderate size and weight, and avoid buying chickens that are too small.
- When buying chicken meat, choose meat that is fresh with a bright pink color, without any foul or strange smell, with skin that is not bruised or has blood spots, and avoid chickens that are dark because they may have died before processing.
- Do not buy chickens with yellow skin and white fat inside, as this indicates that the chicken has been dyed.
- To avoid buying water-injected chickens, when purchasing, press on the areas suspected of being injected (mainly the thighs and breasts) to check; if it feels soft, slippery, or deformed, do not buy it.
How to choose fresh shiitake mushrooms
- For dried shiitake mushrooms, when purchasing, choose mushrooms that are not broken and have a light brown cap.
- For fresh shiitake mushrooms, choose mushrooms that are of moderate size, with short stems, tightly closed caps, and a slightly yellow-brown color.
- Avoid choosing mushrooms with dark brown caps as they may be poisonous.

How to prepare Whole Chicken Wrapped in Sticky Rice

Prepare the ingredients
To clean the chicken thoroughly and remove any odor, use 1 tablespoon of vinegar mixed with salt and apply it evenly over the chicken, or you can soak it in diluted salt and vinegar for about 3 – 5 minutes. Then rinse it thoroughly with clean water several times and let it drain or use a paper towel to absorb the water.
When buying shiitake mushrooms, use a knife to cut off the stems, keeping only the caps and the leaves.
Soak the shiitake mushrooms in diluted salt water for about 5 minutes, then rinse them again with water and let them drain.
Tip:- Besides using vinegar, you can also substitute it with lemon juice mixed with a little salt and proceed as above.
- Another method is to use crushed ginger and roasted shallots to rub on the chicken meat and let it sit for about 10 – 15 minutes, then rinse it with water.

Make the chicken marinade
Add to a bowl in order: 1 teaspoon of seasoning powder, 1 teaspoon of onion powder, 1/2 teaspoon of pepper, and 1 teaspoon of oyster sauce, then mix well until the ingredients are dissolved.

Marinate the chicken and grill
Evenly spread the previously mixed sauce over the chicken, then place 20g of prepared shiitake mushrooms and 10g of thinly sliced ginger into the chicken’s cavity. Let the chicken sit for about 30 minutes to absorb the spices.
Preheat the oven to 200 degrees Celsius before grilling the chicken, then place the marinated chicken on the middle rack of the oven. Grill the chicken for about 30 minutes, then take it out and brush the melted fat that has dripped down onto the chicken.
Continue grilling the chicken for about 15 minutes, then take it out and flip the chicken over. After that, return it to the oven for another 20 minutes, then remove the chicken to cool and chop it into smaller pieces.

Cook sticky rice
Put 800g of sticky rice into a pot and wash it with clean water about 2 times. Then add enough water to cover the rice (about 1/2 of a finger’s length) along with 1/3 teaspoon of turmeric powder and 2/3 teaspoon of salt, then proceed to cook the sticky rice.

Shaping the sticky rice chicken
Lay 2 pieces of plastic wrap in a cross shape, then add the cooked sticky rice on top and spread it evenly. Next, place the chopped chicken and shiitake mushrooms on top of the sticky rice and wrap the chicken tightly with the sticky rice.
You should use your hands to pull and press the plastic wrap tightly so that the sticky rice chicken holds its shape more easily.

Frying the sticky rice chicken and finishing
Place a pan on the stove, add 250ml of cooking oil and wait for the oil to heat up, then add the sticky rice chicken and fry on high heat.
Fry the sticky rice chicken until the outer layer turns dark yellow and crispy, then turn off the heat and transfer to a plate.
Use a knife to cut the sticky rice chicken into small pieces and top with a little scallion oil before enjoying.
