How to choose quality pork
- Good pork will have pink-red lean meat, fresh and bright, with a layer of white, cloudy fat that is translucent, and the cut surface of the meat is dry; when pressed, the meat feels firm and elastic.
- It is best to buy pork with separate meat and fat, but they should stick tightly together; when touched, it feels hard to separate.
- Avoid buying pieces of meat that look dull, are leaking fluid, have an unpleasant smell, or have bruised or blood-clotted areas.
How to choose fresh and delicious tomatoes
- Delicious ripe tomatoes have a bright red color, are juicy, shiny, and evenly colored. The green stem is still fresh and firmly attached to the fruit, proving that the tomatoes were just harvested and are fresh.
- Ripe tomatoes have a faint, characteristic fragrance when smelled, and when cut in half, the seeds are yellow rather than green.

Prepare the vegetables
Wash the tomatoes clean, score them into quarters as shown (do not cut all the way through). Place them in an air fryer and roast at 170 degrees for 10 minutes (or boil for 10 minutes over medium heat) until the tomatoes crack their skins.
After roasting, let the tomatoes cool, then peel them, and use a spoon to mash them finely.
Peel and wash the carrots, then shred or julienne them. After that, place the shredded carrots on a plate and squeeze in 1/2 a lemon. Mix well to ensure even flavor.
Peel the onion, wash it, and then cut it into small wedges. Remove the seeds from the bell pepper and chop it finely.
Peel the shallots and chop them finely. Wash the scallions and chop them small (only use the green part, not the white root).

Making pork meatballs
Put the minced pork into a bowl and mix well with 1 teaspoon of ground pepper, 2 teaspoons of sugar, 1 tablespoon of fish sauce, and 1/2 tablespoon of minced shallots. Marinate for about 15 minutes for the meat to absorb the seasoning.
After 15 minutes, take about 1 tablespoon of minced meat and roll it into a round ball, continue this until all the ingredients are used up.

Making meatball sauce
Place a pot on the stove over medium heat, add 3 tablespoons of cooking oil and minced shallots to sauté until fragrant. Next, add the tomatoes and stir evenly, mashing them further if they are still large, when the tomatoes are lightly boiling, add the onions. Then add 500ml of water. Turn up the heat to bring the water to a boil.
Once boiling, add the meatballs one by one. Season the pot with 1 teaspoon of sugar, 1 teaspoon of ground pepper, and 1 tablespoon of fish sauce.
Boil for 30 minutes until the meatballs are evenly cooked and the sauce thickens a bit, adjust the seasoning to taste, then turn off the stove.

Serve the meatballs in a bowl with bread, pickled carrots, a bit of Thai basil, and chopped green onions. This version doesn’t have satay, but the tomato sauce has a beautiful color and tastes just as good as the original.
