How to make Yogurt from fresh milk (using sunlight)

  • Heat the fresh milk mixture

    Place a pot on the stove, add 1 liter of sweetened fresh milk, 30g of sugar, and 1/3 teaspoon of salt. Cook while stirring continuously on low heat for about 3 minutes until the salt and sugar dissolve completely and the milk starts to warm up.

  • Mix yogurt starter and fresh milk

    After heating the milk, add the entire container of yogurt starter, stir continuously for another 2 minutes on low heat until the yogurt starter is well blended with the fresh milk, then turn off the stove.

    Tip: Throughout the mixing and heating process of the yogurt, you should monitor the heat to prevent the yogurt mixture from boiling, as this will kill the cultures and prevent successful fermentation!

  • Pour the mixture into jars or cups

    First, wash the glass jars and cups thoroughly and let them dry completely, then pour the yogurt mixture you just cooked into a jug and gradually pour the yogurt into the jars.

  • Yogurt Fermentation

    Next, place the glass and jars filled with yogurt in the center of the basin, then use a plastic bag to cover the cups and jars of yogurt completely and place a layer of cloth on top.

    After that, let it sunbathe for about 5 – 6 hours (depending on the sunlight condition that day) until the yogurt sets, and it’s done.

    Tip: If there isn’t enough sunlight, you should ferment the yogurt using warm water to ensure the quality of the final product. Do it as follows:

    • Arrange the jars of yogurt in a pot, then pour warm water (about 50 degrees Celsius) in so that it covers half of the jars.
    • Cover the surface with a cloth soaked in warm water, wrung out. Seal the pot tightly and place it in a cool area for about 6 – 8 hours.

    Yogurt made from fresh milk fermented by sunlight is ready with a smooth and creamy texture, sweet and sour taste. To keep it fresh and more enjoyable, you can store it in the refrigerator in the freezer or the chill compartment depending on your preference.

  • Clean the tools

    Place a pot on the stove, add 1.3 liters of water to the pot, bring it to a boil over high heat, then add the yogurt-making tools, briefly rinse them to eliminate all bacteria for about 1 minute, then remove and let them dry.

  • Heat the fresh milk mixture

    Place another pot on the stove, add 1 liter of sweetened fresh milk and 1 teaspoon of sugar, turn on the stove, and stir continuously for about 2 minutes until the sugar is completely dissolved and the milk reaches a temperature of 25 – 45 degrees Celsius or the temperature for preparing milk for babies, then turn off the stove.

  • If you do not like to eat it frozen, you can put the cooled yogurt in the cool compartment, at a temperature of 2 – 8 degrees Celsius, your yogurt will be preserved for 3 – 5 days.
