How to make yogurt using an air fryer

Cook the milk mixture
Prepare a small pot, add 3 packs of unsweetened fresh milk and 200g of condensed milk, stir until dissolved, then turn on the stove to boil on low heat. When the milk starts to steam, turn off the heat and remove the pot from the stove.
Let the milk cool naturally to about 40 degrees Celsius, then add 1 cup of unsweetened yogurt (starter yogurt) and stir gently in one direction.
Tip: Allow the milk to cool to 37 – 40 degrees Celsius (test by dropping some milk on your hand; if it doesn’t feel hot, it’s ready) before adding the starter yogurt. At this temperature, the yeast will work well, preventing it from dying, and the final product will not be slimy or separate. -
Yogurt incubation
Pour the milk mixture into a bowl or jar and cover it tightly with plastic wrap or a lid. Next, preheat the air fryer to 80 degrees Celsius for 5 minutes to warm it up, then turn it off.
After that, place the covered milk into the air fryer basket, close the lid, and incubate for 10 – 12 hours.
Tip: You should make yogurt in the evening, so it can incubate overnight and be ready to eat in the morning. After the incubation period, check the sourness of the yogurt; if you’re satisfied, put the yogurt in the refrigerator and consume it gradually. -
Final product
The yogurt made with the air fryer is very smooth, creamy, with a mild sour taste. You can add various toasted grains or fruit jams to enhance the flavor of your yogurt.
Successful Implementation Tips
- You need to sterilize all yogurt-making utensils, especially the jars. If the utensils are not clean and contaminated with bacteria, the yogurt will not be perfect; it may become slimy, watery, or have a green/yellow color, an unpleasant smell, or a bitter taste.
- You can measure 50ml or 1.5 cans of boiling water to rinse the condensed milk can to clean it, then add it to the mixture immediately. However, you should adjust the amount of water accordingly; adding too much water will make the yogurt thin.
- If you want the yogurt after incubation to have a layer of yellow film, you should use hot water to dissolve a piece of cheese and then pour it in.
- During incubation, limit moving or touching the yogurt jars, as this can affect the thickening process of the milk, making it prone to separation or breaking.
- If possible, you should use homemade yogurt as a starter because it contains natural cultures, which helps the fermentation of the inverted yogurt succeed more easily.
