Ribs 1 kg Shallots 4 bulbs Garlic 5 cloves Minced lemongrass 1 tablespoon Vegetables for serving 50 gr (lettuce/ herbs/ cucumber/…) Honey 3 tablespoons Fish sauce 1 tablespoon Cooking oil 2 tablespoons Five spice powder 1.5 teaspoons Chili powder 1 teaspoon Common seasoning a little (salt/ pepper/ sugar/ seasoning powder/ monosodium glutamate)

How to choose fresh ribs

  • Good ribs are those that are not too thick and not too thin. Usually, ribs with a thickness of 2 – 3 cm and evenly spaced are considered good. If the spacing is smaller, it is from a young pig, which will be too soft to eat. Conversely, if larger, it is from an older pig, which will be very tough to eat.
  • Prefer to choose ribs that have a relatively thick layer of meat surrounding them. Avoid choosing ribs with a very thin layer of meat as they won’t taste good when cooked.
  • If the meat surrounding the rib has a light pink color, good elasticity, and a slight stickiness, then it is fresh and delicious rib, you should pay attention to these characteristics to choose the right rib!

How to choose good quality honey

  • Prefer to choose honey that has a light yellow color, which will gradually change to orange-yellow over time and, if left too long, will turn dark brown.
  • Quality honey will have a very characteristic aroma when smelled, with a slight pungency. In contrast, regular farmed honey will not smell as good and sometimes may have a slight foul odor.
  • Do not choose honey that is cloudy as it may contain impurities. Avoid selecting honey that tastes sharply sweet and does not have a distinctive aroma.

  • Prepare the ribs

    After buying the ribs, wash them thoroughly with diluted salt water. Then, rinse them twice with clean water and let them drain. Next, cut the ribs into pieces about the thickness of one finger or one and a half fingers.

    For the shallots and garlic, peel them, wash them clean, and then mince them finely. As for the accompanying herbs, wash them clean and let them drain!

  • Marinate the ribs

    Put the prepared ribs into a bowl and marinate with 1 spoon of minced lemongrass, 1.5 teaspoons of five-spice powder, 3 tablespoons of honey, 1 tablespoon of fish sauce, 1/3 teaspoon of pepper, 1 teaspoon of salt, 1 teaspoon of sugar, 1 teaspoon of monosodium glutamate, 2 tablespoons of seasoning powder, 1 teaspoon of chili powder, and 1 tablespoon of cooking oil.

    Next, mix the ingredients thoroughly and wait for about 20 minutes for the ribs to absorb the spices.

  • Grill the ribs

    First, ignite the charcoal until it is red-hot, then place it in the grill. Place the grill rack on top and brush a layer of cooking oil on the rack and heat it up.

    Next, arrange the marinated ribs on the rack, making sure not to stack them too thickly. Finally, you just need to grill and carefully turn the surface of the ribs until they are evenly golden and juicy.

    Tip:
    • You can use an electric grill to grill the ribs as well.
    • The ribs with honey will burn quickly, so you should only grill them when the charcoal is glowing red, and frequently check and turn the ribs. Do not grill the ribs when the charcoal is flaming high, as this will cause the ribs to burn and the meat to cook unevenly.
