  • For live chickens: Depending on your preference, you can choose either roosters or hens. Usually, roosters have firmer, chewier, and tastier meat. Additionally, you should choose a chicken with lively eyes, not sluggish, and a comb that looks bright red. The chicken’s beak should look sharp and show no signs of sliminess. Chicken legs should be thin, straight, and have bright yellow skin.
  • For pre-made chickens: You should choose a local chicken with light yellow, thin skin that may be slightly darker yellow in some areas like the back, wings, and breast. The meat should be pinkish-white and should spring back when pressed.

How to boil chicken with a rice cooker

  • Prepare the chicken

    For the chicken, rub salt all over the body and belly, then rinse several times with water until clean and let it drain.

    How to prepare chicken without odor:
    • To effectively eliminate the odor of chicken, soak the cleaned chicken in a mixture of salt and vinegar for 3 – 5 minutes.
    • Then rinse with clean water several times, and it is ready to be cooked.
    • Additionally, you can use lemon juice instead of vinegar and follow the same steps as above.

  • Marinate the chicken with turmeric powder

    You should marinate about 3 tablespoons of turmeric powder on the chicken skin, massaging carefully to let the turmeric absorb evenly.

    Tip: When marinating with turmeric powder, you should wear plastic gloves to prevent the turmeric from sticking to your hands.

  • Boil chicken using a rice cooker

    Put the chicken into the rice cooker, then add enough water to cover 2/3 of the chicken, then add 1 smashed ginger piece, 3 tablespoons of seasoning, 1 teaspoon of salt, 2 tablespoons of sugar, and use chopsticks to stir the seasoning until dissolved.

    Next, cover the rice cooker, turn on the cooking mode, and boil the chicken for about 10 – 15 minutes.

    After boiling the chicken for 10 minutes, open the lid to check; if the chicken is cooked, switch to the warming button, cover again, and let it rest for about another 10 minutes.

    Finally, prepare a bowl of cold water to soak the boiled chicken for about 5 minutes, then take it out and chop or shred it to enjoy immediately.

    Tip: To make the chicken meat firm and the skin crispy, don’t skip the step of soaking it in cold water for a few minutes!
