How to properly choose fresh pork liver
- To buy good pork liver, you should choose liver that is dark red, bright red, or fresh pink, with an even color.
- Choosing fresh pork liver means selecting whole liver, still fresh, beautiful, with no lumps or deformities. It should feel firm in your hand and not have a foul smell.
- Gently press the liver with your hand; it should feel moderately soft, and the pressed area should not stretch out.
- You should not buy liver with lumps, as that indicates a risk of disease. Avoid liver that feels slimy to the touch, as that means it has been stored for too long.
- To ensure quality, you should purchase pork liver from reputable places like supermarkets or clean food stores.
How to choose fresh and delicious pork
- To have good pork, you should choose pieces that have bright colors, either bright pink or bright red.
- Fresh pork will not have a strong oily smell; gently press with your hand to feel the softness and good elasticity. The pressed area will create a dent, and when you release your hand, it will return to its original shape without leaving fingerprints.
- You should not buy pork that is mushy, feels wet and slimy, or has a rotten smell, as this indicates the meat has been left out for too long or has spoiled.
- You should also avoid choosing pork that has tiny white spots on the meat, as it could be infected with parasites.

How to make steamed pate using a pressure cooker

Prepare liver, meat, and pork fat
First, with 350g of pork liver that you bought, wash it clean with water, drain it, and cut it into large pieces about 1cm thick, then place everything in a bowl and pour in about 170ml of unsweetened fresh milk to soak for 30 minutes.
For 500g of lean pork, wash it clean with water and drain it. Then, from the large piece of meat, cut out 7 very thin slices, large enough to line the mold, and cut the remaining meat into smaller pieces.
Wash 350g of pork fat clean and drain it. Boil a pot of water over high heat and blanch the pieces of fat until the water boils; use a spoon to skim off the dirty foam that rises to the surface.
Take 1/3 of the fat and cut it thin into large pieces to line the mold similar to the meat. Cut the remaining fat into many small pieces.

Prepare the other ingredients
Tear 2 pieces of bread into small pieces and put them in a bowl, pour 170ml of fresh milk evenly over the bowl so that the bread pieces are well soaked in milk.
Take 1 onion, peel off the skin and roots, wash it clean with water, drain, and then cut it into small cubes.
With 2 purple onions and 3 cloves of garlic, peel, wash, drain, and then mince them finely.

Arrange the fat and meat at the bottom of the mold
Prepare a round mold with a diameter of 18cm, first layer the large pieces of fat cut as the first layer at the bottom of the mold. Next, arrange 7 large pieces of lean meat on top as a layer.

Blend and sauté the pâté mixture
Place a pan on the stove and heat over medium flame, add 2 tablespoons of cooking oil, wait for the oil to heat up, then add all the diced onions, shallots, and minced garlic to sauté until fragrant.
Next, add all the pig liver, the diced lean meat, the remaining pieces of fat along with the sautéed onions and garlic, and the bread soaked in milk into the meat grinder and grind until very smooth.
Transfer the blended mixture to a large bowl, season with 1 teaspoon of salt, 1 teaspoon of ground pepper, 2 teaspoons of seasoning powder, and 1/2 tablespoon of sugar, then mix well.
Place a pan on the stove and heat over medium flame, add the seasoned blended pâté mixture and sauté until cooked, while sautéing remember to stir continuously to avoid burning!

Pour into mold
Next, transfer the sautéed pâté mixture into the mold that has been lined with two layers of fat and meat, then use a spatula to spread the pâté mixture evenly in the mold and smooth out the surface of the pâté on top.
At this point, cut 100g of unsalted butter into 4 equal pieces and place them on top of the pâté.

Steaming Pate
Place the pressure cooker on the stove, put in a clean cloth folded into quarters, and pour water to cover the cloth.
Next, place the mold containing the pate mixture into the pot, cook on high heat until the water in the pot boils, then reduce the heat to very low, cover the pot, and tighten the lid to cook under pressure for about 1 hour.
Tip: If using an electric pressure cooker, you can also place the pate mold in the pot similarly and select the “Cook” or “Stew” function and set the time for about 1 hour!After that, take the cooked pate out, let it cool completely, then wrap it tightly with plastic wrap and place it in the fridge refrigerator for 2 hours.
Finally, take the pate out, remove the plastic wrap, place the pate on a plate, and enjoy!
