How to choose fresh, quality goose liver

  • Good goose liver is one that is of moderate size, has a light yellow color, even color, smooth surface, and has a certain degree of indentation when pressed lightly.
  • Do not buy pieces of liver that are too large, as they may contain a lot of fat or water. This will not yield a delicious result when cooked.
  • Do not purchase pieces of liver that have bruises on the surface, have a sour smell, or show signs of decomposition.

    Add to a bowl containing the goose liver 2 teaspoons of ground pepper, 1 teaspoon of salt, 2 teaspoons of sugar, then use a spoon to mix well.

    After mixing the goose liver with the ingredients, transfer the goose liver to a separate bowl and use a spoon to mash the surface smooth.

  • Steaming the goose liver

    Before steaming the goose liver, preheat the oven to about 175 degrees.

    When the oven reaches the required temperature, place the goose liver in to steam for about 30 minutes until the temperature of the goose liver reaches about 49 degrees, then take it out and let it cool.

    When the goose liver has cooled, you remove the excess fat from the steaming process and press the goose liver, then put it in the refrigerator. After that, you can enjoy the goose liver pate dish.
