  • For bamboo shoots that have already been peeled, you should choose those with a rough shape, and the segments are evenly spaced.
  • Fresh bamboo shoots will have bright colors, a crispy texture, and a distinctive aroma.
  • Since fresh bamboo shoots contain a lot of water, they will feel heavy when picked up, with thin, plump skin.
  • Do not buy bamboo shoots that are yellowish or have black spots, and those with a foul smell should not be used.

    Next, prepare a bowl of diluted saltwater, then cut the bamboo shoots into pieces about 2 finger lengths and soak them in the saltwater for about 30 minutes. Rinse thoroughly and let them drain.
