What is All-purpose Flour No. 11?
- All-purpose flour No. 11, also known as plain flour, is made from wheat with a protein content ranging from about 10 – 12%.
- All-purpose flour No. 11 is a common ingredient used to make baked goods with a moderate softness and those that can be pulled. Depending on the type of cake, the amount of flour used will vary, or additional cornstarch may be added if needed.

How to make Mini Steamed Buns

Mix the dough
First, add 130g of type 11 flour, 20g of tapioca starch, 30g of sugar, and 2.5g of yeast into the bowl and mix well.
Next, add 90ml of unsweetened fresh milk and 5ml of cooking oil, stirring until the dough forms a cohesive mass.

Knead the dough
You knead the dough lightly for about 2 minutes to form a mass, then cover tightly to let the dough rest for 5 minutes.
After 5 minutes, continue to knead the dough thoroughly for about 5 – 7 minutes until the dough is smooth and elastic, not sticking to your hands.
Tip: Roll the dough into a long strip, then fold the dough into thirds and repeat this 3 to 4 times for a more elastic and glossy dough. -
Dividing the dough and shaping the buns
Cut the dough into 4 equal parts, take 1 part and roll it out to be about thicker than 1 finger joint, then continue to cut the dough into 10 equal small pieces.
Roll and cut the remaining dough parts in the same way.
Next, line the steaming tray with parchment paper and arrange the small dough pieces that have been cut and shaped into the tray, then let them rise for 30 minutes before steaming.
Tip: If you want the buns to be rectangular, roll them out long and just cut the dough into sections; if you want round buns, roll them into balls. You can also adjust the size of the buns according to your preference! -
Steaming the dumplings
Prepare a pot of boiling water, place the steamer rack on top, cover it, and steam for 8 minutes over medium heat.

- Use a clean cloth to wrap under the pot lid when steaming the buns to retain the steam and prevent the buns from getting wet.
- Do not open the pot lid during the steaming process, and do not steam the buns for too long as they may collapse, become tough, or wrinkle on the surface.
How to store bao buns
- You can store the buns in a sealed container in the refrigerator for 2 – 3 days, and when ready to eat, just steam them again to enjoy.
- Alternatively, you can store the buns in the freezer; this method can keep the buns usable for about 2 – 3 weeks!
