  • You should choose perilla leaves that have a smooth surface, and the leaves are still fresh.
  • It is advisable to choose perilla leaves that have a darker purple color near the stem.
  • Do not buy perilla leaves that are wilted, yellowing, bruised, or rotten.

How to make Oyster Rice Porridge with Vietnamese Perilla

  • Prepare oysters and Vietnamese perilla

    After buying the fresh oysters, wash the outer shells thoroughly and then use a knife to split the oyster shells in half to extract the meat inside.

    Next, place the oysters in a bowl of diluted saltwater and soak for about 10 minutes, then remove and rinse thoroughly, letting them drain.

    For the Vietnamese perilla, pick all the leaves and rinse them briefly with water. Then, soak the perilla leaves in diluted saltwater for 5 – 10 minutes, then remove and rinse with clean water, letting them drain.

    Finally, cut the perilla leaves into 2 – 3 parts depending on their size. Peel and wash the shallots, then chop them finely.
