Prepare and marinate goat meat
Wash the goat meat with alcohol to eliminate the odor, then rinse thoroughly with water. After that, slice the goat meat thinly, marinate the goat meat with 1/2 tablespoon of roasted sesame and the green onion tops, add 1 teaspoon of seasoning, and mix well.
Tips for preparing goat meat without odor- Use white alcohol: Clean the goat meat after purchasing. Peel and wash the ginger, then chop it finely and mix it with white alcohol. Soak the goat meat in the white alcohol mixture for about 5 minutes, then rinse with cold water.
- Use vinegar: Dissolve 15ml of rice vinegar in 1 liter of clean water, boil on the stove. Boil the goat meat in this mixture until the water boils again, then remove it. At this point, the goat meat will have significantly reduced odor.

Prepare vegetables
Pick the old and wilted leaves off the perilla, then wash thoroughly, drain, and cut into strips. White and purple basil should be washed after removing the old, wilted leaves and drained.
Wash carambola, green mango, and green bananas, then drain. After that, score the carambola, peel the green mango and green bananas, and slice them thinly. You can soak the bananas in salty water to keep them white and beautiful, preventing them from browning.

Cooking goat meat in fermented rice
Place a pot on the stove, add 1 tablespoon of cooking oil and sauté minced garlic over medium heat until golden and crispy. Then, add 1.5 liters of filtered water to the pot and bring it to a boil.
Next, put the fermented rice in a bowl, add filtered water, and stir until the fermented rice dissolves, using a sieve or spoon to extract the liquid and discard the solids.
Add that liquid to the pot of water to make the broth for dipping goat meat, seasoning with 1 tablespoon of sugar, 1 tablespoon of fish sauce, 1 teaspoon of salt, and 1/3 teaspoon of monosodium glutamate until the light sour taste of the fermented rice blends with a harmonious salty and sweet flavor.
Continue to boil for about 8 – 10 minutes until the water boils again, add half of the pineapple and 2 smashed lemongrass stalks into the pot of fermented rice water, adjusting the seasoning to taste.

Making dipping sauce
Boil 1 cup (rice bowl) of dipping sauce over low heat until it simmers, chop the remaining 1/2 of the pineapple finely and add it to the pot to cook with the sauce until the mixture thickens.
Put the mixture into a blender and blend until smooth; you can add minced garlic and chili according to your preference.
