How to choose fresh and delicious goat meat
- For goat hot pot, you should choose the goat thigh part that has both meat and bones, which will make the dish more flavorful!
- Delicious goat meat is from young goats, still fresh, with a thin layer of skin, all lean meat, and not thick.
- The bright and shiny color should be red, with even and firm meat fibers; when touched, you can feel the meat’s elasticity, especially it should not be sticky to the touch.
- Freshly slaughtered goat meat often has a characteristic smell, which may be slightly unpleasant, but it should not have a strong fishy odor like spoiled meat.
- You should not buy meat that is pale, not firm, or has a foul smell as this indicates spoiled or rotten meat.
How to choose tasty taro that is not stringy
- Choose round and even taro bulbs, with a rough outer skin, many roots, and dirt still clinging to the skin.
- It’s best to choose taro bulbs that feel light when held, as these are lower in water content and have a higher starch level, resulting in a more flavorful and delicious dish when cooked.
- Avoid choosing taro with few indentations as these are bland and not tasty.

How to Prepare Goat Hotpot

Prepare the Goat Meat and Bones
First, use a torch or roast the skin of the goat over the stove. Next, wash the meat, fat, and bones of the goat several times with salt water and diluted white wine to reduce the odor.
Then rinse thoroughly with cold water and drain in a basket.
How to Clean Goat Meat Without Odor- Method 1: Use two pieces of ginger, peel and crush them. Then mix well with 70ml of white wine to create a ginger wine mixture, then rub it on the goat meat and rinse with water.
- Method 2: Mix 15ml of rice vinegar with 1 liter of clean water, bring to a boil on the stove. When the water boils, add the goat meat and cook until it boils again, then remove and rinse clean.

Prepare Other Ingredients
First, use a knife to peel the taro, then wash it clean and cut it into bite-sized pieces.
Tip:- Taro can cause itching; when you buy it, keep the dirt on the tuber, dry your hands well, and then peel it. Soak it in diluted salt water for 10 minutes, then take it out, and it can be prepared.
- The simplest way is to wear gloves while preparing!
Purple onions and onions are peeled. Lemongrass is cleaned and cut into sections. Ginger is peeled and sliced.
Remove the yellow and wilted leaves of the pennywort, then wash it clean and drain in a basket. Peel the corn and cut it into 2 – 3 small rounds.
Tofu is also cut into bite-sized cubes.

Cook the goat hot pot
Add all the goat meat, fat, and bones into a pot along with purple onions, cut lemongrass, sliced ginger, 1/4 onion, and 1 tablespoon of salt.
Next, pour enough water to cover the ingredients and place it on the stove to boil over high heat. When the pot starts to simmer, add star anise, red dates, and dried chili to the pot.
Cover the pot and continue to simmer for 20 – 25 minutes until the meat starts to soften, then season with 2 tablespoons of fish sauce, 2 teaspoons of seasoning powder, 1 teaspoon of monosodium glutamate, and 1 teaspoon of rock sugar.
Finally, add the corn and taro and continue to simmer for about another 25 minutes until fully cooked, then add the tofu. Adjust the seasoning to taste, and it’s ready to serve.

Serve in a hotpot, prepare additional pennywort, fresh noodles, and dipping sauce to accompany. The goat meat is tender, with no unpleasant smell, combined with the rich and creamy taro, fragrant soft tofu, crunchy sweet corn, and especially the rich and flavorful broth that is simply delicious.
