How to make Salted Egg Sponge Cake for Birthday

  • Prepare salted eggs

    After buying salted eggs, separate the yolks and discard the whites.

    Heat 50g of butter in a pan, add the salted egg yolks and lightly fry them over low heat to prevent them from drying out.

    When the salted eggs are cooked, add a little sugar to enhance the mild sweetness, stir well and turn off the heat.

    You can cut the salted eggs into bite-sized pieces to decorate the cake later.

  • Make the cake batter

    Beat the eggs with sugar until the mixture is smooth and fluffy (about 5-7 minutes).

    Add fresh milk and cooking oil to the egg mixture, and continue to mix well.

    Sift the flour and baking powder into the mixture, gently fold using a whisk or spatula to avoid breaking the batter.

  • Baking the cake with a rice cooker

    Line the bottom of the rice cooker with parchment paper or brush a layer of cooking oil to prevent sticking.

    Pour the prepared cake batter into the rice cooker, spreading it evenly.

    Turn on the rice cooker in Cook mode and bake the cake for about 30-40 minutes. After 15-20 minutes, you can open the lid of the rice cooker to check the cake.

    If you see the cake starting to rise and the surface is evenly golden, you can test it with a toothpick; if it comes out dry, the cake is done.

    Tip: Different rice cookers have varying power levels, so if the cake is not done, you can continue to switch to Cook mode a few more times until the cake is fully cooked.

  • Decorating the cake

    After the sponge cake is baked, let it cool slightly before removing it from the rice cooker.

    Cut the cake into bite-sized pieces and decorate each piece with a bit of fried salted egg, along with a few toasted sesame seeds for extra appeal.

    If desired, you can use pandan leaves to add a vibrant color to the cake.
