How to Choose Fresh Ingredients
How to choose fresh beef
- To choose good beef, you should observe the color of the meat. Fresh meat usually has a bright red color, not dark red, and the fat should be light yellow.
- You should choose small and tender pieces of meat, with fine fibers, and when pressed, they should have good elasticity.
- If you see small white nodules on the meat that can easily be removed, it is likely to be parasitic. You should also avoid small pieces of meat that are pre-cut, as they often contain parasites.
How to choose fresh and delicious gourds
- You should choose young gourds that still have fine hair, and when you gently press the gourd, the skin feels soft.
- Choose gourds that feel heavy in hand, with thick stems and fresh sap marks.
- Avoid selecting old gourds that no longer have fine hair, with hard skin and signs of wormholes.

Prepare and Marinate Beef
To eliminate the odor of beef, wash the meat thoroughly with diluted saltwater, then rinse with clean water, drain, and cut into thin pieces against the grain to make the meat more tender.
Marinate the beef with 2 teaspoons of oyster sauce, 1/2 teaspoon of pepper, a little garlic powder, and a little onion powder. To keep the meat tender and not chewy, add 2 teaspoons of cooking oil. Then mix the meat and spices well, and marinate for about 10 – 15 minutes.
Tip: You should put the beef in the freezer for about 15 minutes and then cut it, which will make it easier.
How to eliminate the odor of beef
- Grill 1 piece of ginger until the skin is burnt, then scrape off the burnt layer and crush it. After that, rub the grilled ginger thoroughly on the beef to eliminate the odor, then rinse with water.
- Alternatively, use the juice of 1 lemon or rub the lemon directly on the piece of beef thoroughly and then rinse it very clean.
- Soak the beef in white wine for about 15 minutes, then rinse it with water several times; this will also help effectively eliminate the odor of beef.
