Prepare the pork
When you buy the pork, rub it with a little salt for about 2 – 3 minutes, then rinse it under running water until it is clean.
Next, blanch the meat in boiling water for about 5 minutes, then let it drain. After that, use a knife to cut the meat into thin slices.
Simple ways to eliminate the smell of pork:- Method 1: Rub the meat with a little salt (or vinegar and lemon juice) for about 2 – 5 minutes, then rinse it clean with water.
- Method 2: Soak the pork in a mixture of diluted salt water or diluted white wine for about 5 minutes, then rinse it with water 2 – 3 times and let it drain.
- Method 3: Put a pot of water on the stove and bring it to a boil, when the water is boiling, add the meat to blanch for a while then take it out and rinse it with water.

Prepare the vegetables
Peel the onion, wash it clean, and cut it into wedges.
Remove the roots of the green onions, wash them with water, and chop them finely.
For garlic and shallots, peel them and chop them finely.

Boil noodles
Place a pot on the stove, add 500ml of water along with 1 spoon of salt and 1 tablespoon of cooking oil into the pot and bring to a boil.
Once the water is boiling, add 120g of rice noodles and boil for about 15 minutes over medium heat. Finally, drain the noodles in a colander and let them dry.

Place a pan on the stove, add 3 tablespoons of cooking oil into the pan. When the oil is hot, add minced onion and garlic and sauté until fragrant.
