  • You should buy kidneys when you see the whole kidney has a dark red color and is uniform.
  • Choose kidneys that feel firm when held, with no strange smell.

  • Do not buy kidneys that are soft or mushy.

How to prepare Stir-fried Noodles with Pork Heart and Kidneys

  • Prepare and marinate the pork heart and kidneys

    First, cut the pork kidneys in half and remove the white membranes inside, then use a knife to slice them into bite-sized pieces, and massage well with salt to eliminate the sliminess and odor. Rinse well with water.

    For the pork heart, use a knife to cut it in half lengthwise, remove all the coagulated blood inside, rinse with saltwater, and then cut the heart into bite-sized pieces.

    To marinate the pork heart and kidneys, add 1/2 teaspoon of seasoning, 1/2 teaspoon of monosodium glutamate, and 1/2 teaspoon of pepper, then mix well and marinate for 30 minutes to absorb the flavors.

    First, briefly blanch the instant noodles by placing them in boiling water for about 30 seconds, then remove them.

    Tip: You should time the blanching of the noodles precisely so that they are not overcooked, which would make them mushy and less delicious.

    Wash the sweet mustard greens thoroughly, then place them in boiling water, blanch for about 1 minute, and then remove them.

    Use a knife to finely chop 1 onion and 2 cloves of garlic. For fresh shiitake mushrooms, you only need to wash them thoroughly, soak in water for 15 minutes, and then drain.

    • Method 1 (boil the mushrooms): Use a knife to cut off any dirty stems (if any), then boil the mushrooms in a pot of boiling water for about 3 minutes, then remove and drain.

Then rinse with cold water and cut off the mushroom stems to help them be free of impurities. You can also wash the shiitake mushrooms with rice water to eliminate the strong smell of the mushrooms and help them retain their natural flavor.
    • Method 3 (wash the mushrooms): After cutting off the dirty parts under the stems, soak them in diluted salt water for 2 minutes, then rinse thoroughly with water.
