How to make Xôi sắn

  • Cook the sticky rice

    Soak the sticky rice in clean water for 4 – 6 hours for better quality.

    Peel the cassava, wash it clean, cut it lengthwise to remove the fibrous part, then cut it into small pieces the size of your thumb so that it cooks quickly.

    Soak the cassava in the rice washing water with a bit of salt for 4 – 6 hours to reduce the toxic resin of the cassava.

    After soaking the sticky rice and cassava, rinse them with clean water to drain. Then mix the sticky rice with the cassava and add a teaspoon of salt, tossing well. Put everything into a rice cooker to steam.

  • Prepare other ingredients

    Fatty pork, skin removed, cut into small pieces. Sausage cut into small pieces about the size of a finger joint. Dried onion, peeled and sliced. Green onion, chopped and ready.

    Add the fatty pork to the pan, fry until it becomes crispy pork fat, then remove the crispy part and use the melted fat to fry the dried onion.

    Stir-fry the sausage until cooked in the hot fat, then set aside.

    In the remaining hot fat, add the chopped green onion and 1 tablespoon of good fish sauce, then quickly toss in the crispy pork and turn off the heat immediately.

    The sticky rice with cassava is cooked when the rice and cassava are soft. During the steaming process, if you want it to taste better, prepare an extra tablespoon of coconut milk to drizzle over the surface of the sticky rice and mix well to enhance the delicious coconut flavor.

    500 gr of cassava should be peeled, washed, and soaked in water overnight. After soaking, cut the cassava into bite-sized pieces.

  • Peeling before cooking, soaking cassava in water for a while before cooking fresh cassava. When cooking, open the lid to let HCN evaporate.
  • When boiling cassava, change the water 2-3 times to reduce toxins.
  • Sliced and dried cassava also reduces the toxins in cassava.
  • Sweet cassava types must be processed immediately after harvesting; otherwise, they should be buried.
  • It is not advisable to eat cassava at night, as symptoms of poisoning occurring at night may not be detected in time or may not receive timely emergency treatment.
