Fresh milk ice cream 300 ml (Ice cream part) Sugar 170 gr (Ice cream part) Coconut milk 100 ml (Ice cream part) Dried coconut 60 gr (Ice cream part) Glutinous rice 500 gr (Sticky rice part) Dried butterfly pea flowers 20 gr (Sticky rice part) Salt 1/2 teaspoon (Sticky rice part) Grated coconut 2 gr (Sticky rice part)

How to make Butterfly Pea Sticky Rice Ice Cream

  • Make ice cream

    Add 250ml of unsweetened fresh milk, 300ml of fresh cream, 170g of sugar, and 100ml of coconut milk into the blender, then turn on the blender until the mixture is well combined.

    Pour the mixture into a box or bowl, then sprinkle 60g of dried coconut and 60g of roasted peanuts on top, and place it in the freezer for 7 – 8 hours.

  • Cook butterfly pea sticky rice

    Add 20g of dried butterfly pea flowers and 700ml of hot water into a bowl, then stir well and wait about 10 – 15 minutes for the flowers to release their color.

    Wash 500g of sticky rice clean, then add it to the bowl with 700ml of butterfly pea water. Soak for 7 – 8 hours, then drain.

    Next, mix the sticky rice with ½ teaspoon of salt and steam it until cooked.
