How to Choose Fresh Sweet Potatoes
- When buying sweet potatoes, you should choose those that are round and elongated in shape, without any waists or scratches.
- Additionally, good sweet potatoes will feel firm when you squeeze them gently, not too hard and not too soft and mushy.
- Prioritize purchasing sweet potatoes of moderate size, as large ones can be fibrous and not tasty, while small ones may not be sweet and rich enough.
- Avoid buying sweet potatoes with indentations on the body or with dark spots, as these have been stored too long and are likely spoiled, making them unsuitable for cooking.
How to make Sweet Potato with Sugar

Prepare the ingredients
After buying the sweet potatoes, wash them thoroughly, peel them, and soak them in diluted salt water for about 5 minutes to remove all the sap. After that, rinse the sweet potatoes with clean water.
Ginger only needs to be peeled and slightly crushed.
Tip: To ensure the sweet potatoes are soft and absorb the spices more quickly, you should cut all the tubers in half. For larger sweet potatoes, you should cut them into 3 or 4 pieces. -
Caramelizing the sugar
Place a pan on the stove, add 50ml of water and 200gr of brown sugar, then bring to a boil over low heat until the sugar completely dissolves. To check if it’s ready, drop some sugar into a bowl of water (rice bowl), and if the sugar thickens, add the remaining water.
Note: When boiling the sugar, do not use chopsticks to stir the sugar; just shake the pan to dissolve the sugar. -
Making caramelized sweet potato
After adding all the filtered water into the pan, add all the smashed sweet potatoes and ginger.
Cook on low heat and use a spoon to drizzle the sugar evenly over the sweet potatoes for about 5 minutes until the sweet potatoes are cooked and well absorbed with the seasoning, then squeeze the juice of 1/2 a lemon into it.
Cook for another minute and then turn off the stove.
Tip: If you prefer a drier dish, you can cook a little longer until the sugar syrup is absorbed into the sweet potatoes! -
