Red Thai tea 32 gr Fresh milk 300 ml Whipping cream 200 ml Gelatin powder 5 gr Cream powder 150 gr Yellow sugar 50 gr Condensed milk 80 gr Ice cubes A little Sugar/salt A little Filtered water 1.25 liters

What is Red Thai Tea?

What is Gelatin?

  • Gelatin is produced from collagen, which is found in the bones and skin of animals (for example, pigskin).
  • Currently, in food preparation, there are usually 2 main types: gelatin powder and gelatin sheets.
  • Gelatin usually has no smell, no taste, and is clear or light yellow in color.

How to make Thai Red Milk Tea Panna Cotta

  • Cook Thai Tea Jelly

    Pour 30ml of hot water into a glass and then add 2gr of Thai red tea, steep for 15 minutes. After that, strain the tea extract through a sieve to remove the tea leaves.

    Mix 50gr of golden granulated sugar and 5gr of jelly powder well. Pour 500ml of water into a pot and then add the jelly powder mixture, soak for 15 minutes. Place it on the stove, cook over medium heat until this mixture boils, then slowly pour in 30ml of Thai red tea extract.

    After cooking for about 10 minutes, the mixture will boil, so turn off the heat, carefully pour it into a mold, and place it in the refrigerator for about 30 minutes to 1 hour.

    After 1 hour, when the jelly has set, carefully cut it into small cubes.

  • Make the panna cotta layer

    Pour 8g of gelatin powder and 20ml of water into a bowl, stir well. Pour 300ml of fresh milk into a pot, add 200ml of whipping cream, 60g of sugar, and 1/3 teaspoon of salt, stir well and then place on the stove.

    Heat over low heat until the milk mixture is warm, then add the gelatin and sugar, gently stir until the gelatin completely dissolves, then turn off the heat. Pour this mixture into about 1/3 of a bottle and place it in the refrigerator for about 30 minutes to 1 hour.

  • Making Thai Red Milk Tea

    Place a pot on the stove, boil 700ml of water, then add 30gr of Thai red tea, stir well, and cook for about 5 minutes before pouring this mixture through a sieve to remove the tea leaves.

    Scoop 150gr of creamer into the bottle, then slowly pour in 700ml of Thai red tea concentrate, add 1/3 teaspoon of salt, 80gr of condensed milk, and stir well. Add some ice cubes.

When stored in the refrigerator at a temperature of 10 – 15 degrees Celsius, Thai milk tea can last for 2 – 3 days. Avoid placing it near fresh, pungent foods. You should ask the seller to separate the tapioca pearls and the Thai milk tea to help it last longer.
