How to make Green tea tapioca pearls from tapioca flour

  • Mix the flour

    Add 100 gr of tapioca flour into a large bowl, then add 5 gr of matcha green tea powder and mix the mixture well with a spoon.

  • Kneading the dough and shaping the pearls

    Place a pot of water on the stove and bring it to a boil. Next, slowly add 100ml of boiling water to the bowl of flour (about 2 tablespoons) and gently stir with a spoon.

    Wait for the dough to cool slightly, then use your hands to knead until the dough is smooth and elastic, no longer sticking to your hands.

    Note: If you find the dough too dry, you can add a little more water.

    Then, divide the dough into 4 parts and shape each piece into a ball. Roll the dough into long strands and use a knife to cut them into equal small pieces and proceed to shape them into balls.

    Tip:
    • While shaping the pearls, you should sprinkle a layer of dry tapioca flour to prevent sticking to your hands.
    • You should keep the unshaped dough in a bowl and cover it with a plate to keep it warm and prevent it from drying out.
    • The shaped pearls can be stored by placing them in the freezer to use later.

  • Boiling Tapioca Pearls

    Boil about 1 – 1.5 liters of water. Once the water is boiling, add the tapioca pearls to cook. During the cooking process, do not cover the pot and use chopsticks to stir evenly so that the pearls do not stick to the bottom of the pot.

    When the water boils again and the tapioca pearls float to the surface, gently stir with a ladle and continue boiling for about 15 – 20 minutes.

    After boiling for 15 – 20 minutes, turn off the heat, cover the pot, and let it rest for another 15 – 20 minutes until the tapioca pearls become translucent and are cooked. Then, remove the tapioca pearls and immediately soak them in cold water for about 5 – 7 minutes to make them chewier and prevent them from sticking together.

    Finally, transfer the tapioca pearls to a clean bowl and add 50 grams of sugar, then soak for at least 15 – 30 minutes for the pearls to absorb the sugar and become sweeter.

  • Mix and boil the agar mixture

    Boil 500ml of water. Next, add a mixture of 100gr sugar, 12gr agar powder, and 3gr matcha green tea powder into a bowl and mix well.

    When the water has boiled, add the mixture to the pot and stir well until completely dissolved. Then, simmer until the mixture thickens slightly.

  • Shaping the pearls

    You prepare a plastic bottle and punch a round hole in the lid to shape the pearls or you can also use a clean bottle with a pointed tip (like a sauce bottle that can withstand heat).

    Next, prepare a large bowl of ice water, then pour about 1/2 cup of cooking oil so that it separates the layer of oil and water.

    Pour the hot mixture into the bottle and proceed to shape the pearls. Drop each drop of the mixture into the bowl of cold water, the jelly drop passing through the oil layer will form a round shape sinking into the ice water and hardening into pearls.

    After shaping all the mixture, you remove the layer of oil on the surface of the bowl. Next, scoop out the pearls and rinse them with water and you can add sugar to the pearls to enhance the flavor.
