How to Make Plum Panna Cotta

Cook the plums with sugar
Wash the plums, then pit them. Next, place 300g of pitted plums in a pan, add 30g of sugar and 100ml of water, and stir well.
Cook the plums over medium heat until they soften, then use a spoon to mash them into a thick mixture.

Make the plum jelly layer
Soak 5g of gelatin powder in 100ml of water for about 15 minutes to let the gelatin swell.
After we have the mixture of plums soaked in sugar, we will strain to get the juice, then add the soaked gelatin and stir the mixture in the pan for 2 minutes.

Pour into mold and chill the cake for the first time
After the gelatin is fully cooked, we will start pouring the plum jelly mixture into the mold and place it in the refrigerator for 2 hours to let the jelly set.

Make the panna cotta layer
Soak 5g of gelatin powder in 100ml of filtered water and set aside for the gelatin to bloom. In the meantime, pour 100ml of milk and 30g of sugar into the pot and heat it, then add 250ml of fresh cream and stir the mixture well.
When the mixture starts to simmer, proceed to add 1 teaspoon of vanilla extract and continue to stir well.

Caramelize the plums with sugar
Put pitted plums into a hot pot, add 30g of sugar and 200ml of water, and stir well. Cover and let it sit for 10 minutes.
After 10 minutes, when the plums are soft, pour them into a sieve and strain to collect the juice, using a spoon to gently press down to extract all the plum juice.

Make the plum jelly layer
Soak 2 sheets of gelatin in 200ml of water in a bowl and set aside for the gelatin to bloom.
After straining the plum juice, squeeze the gelatin sheets to remove excess water and add them to the plum juice mixture, stirring well until the gelatin dissolves.

Pouring the mold and chilling the cake for the first time
We will brush a thin layer of oil on the cake molds, then pour the mixed plum jelly water into the molds. Place the plum jelly molds in the refrigerator for 1 hour to let the jelly set.
Tip: Brushing a layer of oil on the mold makes it easier to remove the panna cotta later. -
Making the coconut panna cotta layer
Soak the remaining 3 sheets of gelatin in 100ml of water to let them bloom and set aside.
Gradually add 250ml of fresh cream, 20gr of coconut powder, and 30gr of sugar into a pot that is heating up, and stir the mixture well. Heat the mixture for 10 minutes over low heat until it is hot but not boiling.
After 10 minutes, pour the coconut cream mixture into a bowl or a container. Squeeze out the excess water from the gelatin and add the gelatin to the mixture, stirring well.

Pouring the mold and cooling the cake for the second time
Remove the coconut cream mixture from the stove and let it cool completely before continuing to pour the next layer.
After one hour, the plum jelly has set, we continue to pour the coconut cream mixture on top of the plum jelly.
Tip:- If you pour the hot mixture directly onto the plum jelly, it will cause the plum jelly to melt.
- To easily remove the panna cotta from the mold, you can soak the mold in warm water for a few seconds before taking it out.
