What is Gelatin?

  • Gelatin is extracted from collagen – which exists in the bones and skin of animals (for example, pig skin). The process involves carefully treating animal skins from the cleaning stage to the processing stage to create gelatin that can be used in the food industry.
  • Gelatin is commonly used to make jelly and gummy candies, as well as popular desserts like mousse and pudding.
  • Using gelatin in baking because it has emulsifying properties, binding other ingredients together to help stabilize the food structure better, and it also helps make cakes softer.

How to choose fresh plums

  • Choose plums that still have fresh green leaves, intact, round and plump without being deformed. Avoid choosing bruised fruits, those with brown skin, nail marks, scratches, or insect bites.
  • The outer skin of the plum must be smooth and shiny, and there should be a thin layer of white powder covering the fruit. It is best to choose plums that have a skin color that mixes green and red, or those that are dark red, which tend to be much sweeter.
  • Avoid purchasing plums that are purely green or red, as they are usually under-ripe, sour, or those that are overripe and no longer crunchy and delicious.
