  • Cook Sticky Rice

    First, mix 1 cup of glutinous rice and 1/4 cup of mung beans together, then wash them several times with clean water to remove all dirt.

    Next, pour clean water into the bowl with the washed glutinous rice and mung beans and soak for 1 hour. After soaking the rice for 1 hour, start pouring the rice and beans into the steamer.

    When steaming, turn on high heat until the water boils, then reduce the heat low for the sticky rice to cook. Wait until the rice is cooked, then turn off the heat.

    First, clean the Vietnamese coriander and peel the onion. Then, use a knife to slice the onion into small strips and soak it in clean water with a little salt to remove the sap. You can add a few ice cubes to the water to make the onions crisper.

    Next, add the shredded chicken to a bowl with 1 teaspoon of salt, 1/3 teaspoon of seasoning, 1 teaspoon of pepper, and sliced chili, then mix all the ingredients together well.

    Continue by adding the sliced onion and mixing evenly, then add the Vietnamese coriander and mix again. Finally, squeeze lime juice into the shredded chicken salad and mix once more to infuse the flavor.

  • Steamed Sticky Rice

    You place the steamer on the stove, add water and pandan leaves, and bring it to a boil. Once the water is boiling, you start adding the sticky rice, spreading it evenly on the steamer, then cover the lid and steam for 5 minutes.

    Tip: Note that you should ensure the water is boiling and the steamer is very hot before adding the sticky rice to avoid the grains becoming mushy.

    After 5 minutes, you open the lid, drizzle 100ml of coconut milk evenly over the sticky rice, then mix well, cover the lid, and steam for an additional 2 minutes. Then you continue to add another 100ml of coconut milk, mix well, and steam for another 3 minutes.

    Finally, you open the lid and steam for 3 more minutes to dry out the sticky rice, making the grains drier.

    You add the fried quail eggs, shredded chicken, fried shallots, and cilantro on top of the hot sticky rice, and it’s done!

How to choose fresh and delicious chicken

  • The good chicken meat will have a characteristic shiny yellow skin. The outer skin is thin, feels smooth to the touch, not too bumpy and has good elasticity.
  • The inner chicken meat has a natural pinkish-red color, not too pale or too dark. Especially the chicken meat should not have bruises or blood spots.
  • If buying pre-packaged meat, carefully observe the expiration date and packaging date. Check if the seals of the bags are intact.

How to clean chicken without a bad smell

  • First, you start boiling a pot of water and add a little starfruit leaves, then bring them to a boil. When the water boils, put in the slaughtered chicken and blanch it for 3 – 5 minutes to allow the water to penetrate the chicken feathers. However, do not soak too long as this will cause the chicken meat to peel off.
  • Afterward, wait for it to cool down a bit, then proceed to pluck the chicken feathers. You need to pluck closely and firmly to remove all the fine feathers (down) of the chicken. Rinse the chicken with clean water several times to tighten the chicken skin.
  • Cut off the oil gland at the tail of the chicken; if it cannot be used, you can also cut off the tip of the chicken’s tail to avoid affecting the flavor of the dish.
  • First, mix vinegar with salt and rub it all over the chicken or you can soak the chicken in that mixture for about 3 – 5 minutes. Then rinse with clean water several times, and it is ready to prepare delicious dishes.
