  • Cook the crab soup

    Add 4 tablespoons of tapioca flour into a bowl, then add 250ml of filtered water and stir well. Crack 2 chicken eggs into another bowl and whisk the eggs.

    Next, place a pot on the stove, add 3.5 liters of broth to the pot, then add diced carrots along with 2 tablespoons of sugar and 1/2 teaspoon of salt.

    After that, add 300g of fresh bamboo shoots and 100g of prepared snow fungus into the pot, then continue adding the remaining ingredients including chicken meat and 400g of crab meat into the pot to cook over high heat until boiling, then reduce to medium heat.

    To create thickness for the soup, add the bowl of tapioca water into the pot, then add all 15 peeled quail eggs.

    Then, pour the mixed eggs through a sieve and into the soup pot, stirring gently in one direction so the eggs will form beautiful strands. Cook the soup over medium heat for about 15 minutes to complete.

    Soak 20g of dried shiitake mushrooms in water for about 30 minutes, changing the water about 3 – 4 times to remove some of the dark water, then cut them into strips.

    Peel 1 cassava root and cut it into large pieces. Peel the carrot and cut it into small cubes. Remove the husks from 2 ears of corn and cut them into quarters, saving 2 rounds of corn to cut the kernels off for making soup.

  • Boil eggs

    Put a pot of water on the stove, add 500ml of water, add 1/2 teaspoon of salt, and put 4 quail eggs and 30 duck eggs to boil over medium heat.

    When the water boils, remove the duck eggs. For the quail eggs, wait about 5 minutes after the water boils, then take them out.

    Continue to cook the soup over medium heat until it comes to a boil again, then add the carrots to the pot, season with 1 teaspoon of salt, 3 teaspoons of seasoning, adjust the taste to your liking, and then add all the prepared ingredients including corn, shiitake mushrooms, quail eggs, chicken meat, and crab meat to the pot.

    To create thickness for the soup, mix 100g of corn starch, 100g of tapioca starch, and 100ml of water in a bowl, stir well, and then add it to the soup pot.

    Separate the egg whites and yolks of 3 eggs into bowls, beat them well, then strain them so that the egg whites go into the pot first, followed by the yolks to create strands of egg. After that, stir the soup well to finish.
