    Clean the ginger, turmeric, and chili, then gradually add the spices into a mortar and pound them into a paste.

  • Prepare and marinate tilapia

    When buying tilapia, scrape off the scales, cut off the tail and fins, then gut it, removing the internal organs and the bloodline running along the fish’s back.

    Rub the fish with salt for about 3 – 5 minutes, then rinse thoroughly with water, let it drain, and use a knife to make a few cuts on the fish’s body.

    Place the fish in an pan, then add the crushed seasoning mixture, followed by 1.5 tablespoons of cooking oil, 1/2 tablespoon of fish sauce, 2 teaspoons of ground pepper, 1 teaspoon of monosodium glutamate, 1 teaspoon of seasoning powder, 1 teaspoon of sugar, 1/2 teaspoon of salt, and 1/2 teaspoon of five-spice powder, then mix well.

    Place the fish pan on the stove, turn the heat to medium and cook until the sauce boils and the fish is cooked and firm on both sides, then lower the heat and continue to simmer for about 5 more minutes for the fish to be cooked through and absorb the seasoning, then turn off the heat.

    You put a pot of water on the stove and add the washed rice, turn on medium heat and cook until the water boils, then reduce the heat and continue to cook for about 15 – 20 more minutes until the porridge is soft.

  • Prepare and boil tilapia

    To remove the fishy smell of tilapia, after buying, you need to peel off the black membrane and the bloodline inside, then massage the fish with a little salt and rinse thoroughly with water, then let it drain.

    Put a pot of water on the stove, add 1 teaspoon of salt and bring to a boil, then add the fish and boil for about 5 – 10 minutes (depending on size), then remove the fish, let it cool, and separate the flesh, discarding the skin.

  • The fish body is intact without wounds, and the scales are still firmly attached to the body. Choose fish that are plump, round, large, and smooth, with a firm body, and a head and body that are proportional to each other.
