How to Make Soybean Pudding

  • Wash and Soak the Soybeans

    Wash the soybeans clean, remove any bad beans, and soak them in water for about 2 hours.

    Once the soybeans have soaked and expanded, peel off the outer skin, keeping only the beans, and then drain them using a strainer.

  • Cook the soybean dessert

    Put a pot on the stove, pour in 400g of sugar and 1.3 liters of water. Stir well to completely dissolve the sugar, then wait for the water to boil before adding the soybeans.

    Reduce the heat, cook for about 20 – 25 minutes until the soybeans are soft, then adjust the sweetness of the dessert to suit your family’s taste before turning off the stove.

How to prepare Soybean Pudding with Coconut Milk

  • Prepare the soybeans

    Pour the soybeans into a bowl, rinse the beans about 2 times with water, and remove any spoiled beans. On the third rinse, add about 200ml of water and soak the beans overnight to soften the skins for easier peeling.

    After one night, rinse the beans again with water until clean, then peel each soybean one by one.

    After the soybeans have been fully shelled, pour them into a pot with about 400ml of water, adjust the heat to low, and simmer the beans for about 1 hour 45 minutes to 2 hours. Once the beans are soft, remove them and sieve to drain.

    Add 50g of brown sugar and 200ml of water to the pot, place it on the stove and bring to a boil. When this sugar-water mixture is boiling, add all the soybeans and cover the pot.

    Mix 13g of tapioca flour and 40ml of cold water in a bowl, stir well until the tapioca flour is fully dissolved, then add it to the soybean pudding pot. Stir well and cook for an additional 2 minutes before turning off the heat.

  • Cook coconut milk and complete

    To make coconut milk to serve with the dessert, add 200ml of coconut milk, 7gr of tapioca flour, 2 tablespoons of white sugar, 30ml of water, and 1/3 teaspoon of salt into a pot, place it on the stove, simmer on low heat and stir well.

    After about 3 minutes, when the coconut milk begins to thicken, turn off the heat and let it cool.

    To enjoy, scoop the soybean dessert into a bowl, pour a little coconut milk on top, mix well and enjoy.
