  • Choose kohlrabi of moderate size, when held in hand it should feel heavy and firm, the bulb should be intact, with a natural color, light fresh green, not soft, not infested, or bruised.
  • Avoid choosing bulbs with shiny skin that look unusually fresh, as they may have been soaked in chemicals or stimulants.

  • The darker the green color of the broccoli, the tastier it is.

  • Prepare the Ingredients

    Soak the shiitake mushrooms in cold water to clean them from dust, then soak them in water for about 30 minutes to 1 hour until they are soft. After that, cut off the stems.

    Kohlrabi and carrots should be peeled and washed clean. Then slice them into pieces about 2cm thick and use a mold to shape them into flowers.

    Boil the quail eggs until cooked, then peel them clean.

    Soak the broccoli in diluted salt water for about 15 minutes, then rinse with clean water and cut into small bite-sized pieces.

  • Stuff the fresh pork sausage into the shiitake mushrooms.

    First, marinate the fresh pork sausage with 1/2 teaspoon of ground pepper, mixing well.

    Next, turn the mushrooms upside down, use a spoon to stuff the fresh pork sausage into them. Repeat until all the mushrooms and the prepared sausage are used up.

    Note:

    • Stuff firmly and use a rounded spoon to shape the sausage nicely.
    • The leftover sausage can be shaped into balls to cook in the soup.

  • Making the broth

    Place a pot on the stove, pour 400ml of bone broth into it, add 2 slices of ginger and 10g of green onion. Proceed to bring the broth to a boil.

    When the broth starts boiling, add the meatballs and mushrooms to cook, and when the meatballs rise to the surface, remove them.

    Next, add the carrots, kohlrabi, quail eggs, and cauliflower, and cook until the water boils again and the vegetables are just tender, then add the meatballs back in and stir well.

    Season the pot with 1 teaspoon of seasoning, 1/2 teaspoon of monosodium glutamate, and stir well. Cook for about 2 more minutes before turning off the heat.

  • Good pork bones usually have a fresh color, are not pale, and do not have any strange smell.
  • The bones should be about the size of 2 – 3 finger joints or larger if they are from a female pig for better taste.
  • Avoid choosing small bones as they are from younger pigs, which may be sick and slaughtered early for sale.

How to Choose Delicious, Rich Lotus Seeds

  • You should buy lotus seeds with their shells still on and peel them yourself. Although this takes some time, you will have fresh lotus seeds and feel more assured when using them.
  • When buying peeled fresh lotus seeds, choose those that are mature, plump, and have an ivory or deep yellow color outside. Cooking these types of lotus seeds will yield a distinctive aroma. Especially, these lotus seeds will not be chewy and taste very good.

  • Prepare the ingredients

    For lotus seeds, you can buy fresh lotus seeds or dried lotus seeds.

    For fresh lotus seeds: You need to peel them, remove the lotus seed core, and wash them thoroughly to avoid bitterness if any core remains.

    For dried lotus seeds from the supermarket: You need to soak them in water for about 7 – 8 hours to ensure the seeds swell evenly and do not remain hard, then rinse them clean with water.

    Pork bones should be washed clean, placed in a clean basin, and add about 1 teaspoon of salt. Then pour boiling water over them, blanch for 2 – 3 minutes to clean the bones and remove any blood, then wash them again with water and drain.

    Carrots should be washed clean, peeled, and then sliced. The pork sausage should be rolled into balls.

    Quail eggs should be boiled until cooked, then peeled. Heat a pan on the stove and fry the quail eggs until golden brown.

    Shiitake mushrooms should be soaked in warm water for about 2 – 3 hours until soft. Then cut off the mushroom stems.

    Because lotus seeds are very hard, to save time, you should stew the lotus seeds with 1 – 2 liters of water for 20 minutes.

    Place a pot on the stove, add about 4 liters of water and bring it to a boil, add pork bones, and 1 – 2 shallots, and boil the water.

    When the water starts to boil, use a spoon to skim off the foam, then add the lotus seeds.

    Stew for about 1 hour until the lotus seeds are soft and the pork bones release all their sweetness.

    • Since lotus seeds are quite hard, you need to stew them beforehand so that they become soft and delicious, saving cooking time.
    • During the stewing process, you should pay attention to skimming off the foam to keep the broth clear and visually appealing.

  • Cooking the soup

    Use a spoon to stuff the pork mixture into the shiitake mushrooms.

    When the broth has been simmered for the desired time, add the carved carrot flowers, stuffed shiitake mushrooms, 2 teaspoons of seasoning, 1 teaspoon of salt, and 1/2 teaspoon of monosodium glutamate to the pot.

    Stir well and cook until all ingredients are evenly cooked.

    Finally, add the fried quail eggs to the pot, continue to cook for another 2 minutes, then turn off the heat.

    Scoop the soup into a bowl and sprinkle with a little ground pepper and chopped green onions and cilantro to finish.

  • Do not buy bruised, deformed, or wilted carrots. Avoid picking overly large carrots as they will have more fibers and a bland taste.

How to properly prepare dried shiitake mushrooms

  • Wash the mushrooms in water to remove dirt, then soak them in water for 30 minutes to a few hours to soften; soaking for less than 30 minutes will not soften the mushrooms enough, making them less tasty when cooked.
  • To shorten the soaking time, you can soak the mushrooms in warm or hot water at 60 – 80 degrees Celsius for 10 minutes.
  • While soaking, turn the base of the mushrooms to face the water surface to easily remove dirt from the shiitake mushrooms.
  • Cut off the mushroom stems as they are very tough and not tasty.
