How to prepare Mango Tapioca Pudding
-
Cook the coconut milk mixture
First, add 500ml of fresh milk to a pot, then add 200ml of coconut cream, 150gr of rock sugar, ¼ teaspoon of salt, and 40gr of pandan leaves into the milk and bring it to a boil over low heat. Stir continuously to prevent the milk from burning at the bottom.
After 5 minutes, remove the pandan leaves and add 300gr of young coconut meat, stirring well and cooking for another 5 minutes before turning off the heat.
-
Mix the tapioca flour
Add 300gr of tapioca flour into a large bowl, then pour in 170ml of boiling water and mix until the flour clumps together. Knead the dough thoroughly until it is firm and even.
Once the dough has formed a cohesive, elastic mass that does not stick to your hands, divide it into small bite-sized pieces and roll them into balls.
Tip: Depending on the quality of the flour, the amount of water needed to knead the dough may vary. To mix the flour properly, gradually add water until the dough is elastic and sticky but not runny. -
Boil the tapioca pearls
Next, bring all the freshly rolled tapioca pearls to boil until cooked. When the pearls float to the surface, remove them and soak them in cold water.
-
Cut the mango and jelly, and complete
Wash the mango thoroughly with water, then peel it.
Next, cut the mango and jelly into bite-sized pieces.
Now, add some ice to a bowl, then arrange several slices of ripe mango, a bit of jelly, and the tapioca pearls on top. Finally, pour the coconut milk and young coconut flesh into the bowl, then sprinkle some dried coconut on top, and it’s ready to enjoy.
-
Final product
The mango tapioca pudding dish with the sweet aroma of mango, the rich flavor of coconut, mixed with the fragrant scent of milk truly makes one feel ecstatic.

How to choose delicious ripe mangoes
- Choose fruits that have an even yellow color, with the mango flesh firm above the stem, not soft or wrinkled, and the stem slightly indented into the flesh.
- Good mangoes will have taut skin, not rough, and small purple spots. Fresh mangoes without preservatives have a strong sweet aroma and essential oils at the stem.
- Avoid choosing mangoes that are too soft or too hard. Naturally ripe mangoes will have a certain firmness, feel solid in the hand, and will not be crushed when pressed.
