How to choose fresh and delicious straw mushrooms
- Good straw mushrooms are still in bud form, round or cylindrical, and feel slightly firm when pressed gently.
- Choose mushrooms that are uniform in size for a more visually appealing and tasty dish.
- Black or gray straw mushrooms are tastier than the white ones. Fresh mushrooms should have bright colors and a distinctive mushroom aroma.
- Avoid selecting mushrooms that smell bad, appear dull, feel soft and mushy to the touch, or have grown too large, as these are likely stale and won’t taste good.

How to make Mung Bean Frog Porridge with Straw Mushrooms
-
Prepare the ingredients
Mung beans are washed clean, soaked in water for 1 – 2 hours, then drained.
White rice should be cleaned. Shallots and garlic are peeled and minced. The green onion’s bulb is cut into pieces, and the leaves are chopped finely.
Straw mushrooms are trimmed at the base to clean them, then soaked in a diluted saltwater solution for about 10 minutes, and rinsed again with water, then drained. If the mushrooms are large, cut them in half or into thirds for easier eating.
To eliminate the fishy smell, rub the frog meat thoroughly with a mixture of white alcohol and smashed ginger, then rinse it under running water until clean.
-
Cooking porridge
Place a pot of water on the stove, pour rice and mung beans into the pot, turn on high heat to bring to a boil, then lower the heat and let it simmer for about 40 minutes. During this time, you can prepare other ingredients.
-
Grinding and stir-frying frog meat
Mix half of the frog meat with a little fried garlic and onion, then put it in a meat grinder to grind finely. The remaining frog meat should be added to the pot of porridge cooking on the stove, stirring well.
Next, place a pan on the stove, add 2 tablespoons of cooking oil, heat it up, add half of the chopped garlic and onion to fry until golden and fragrant, then add the ground frog meat, stir well, and season the pan with 1 teaspoon of seasoning, stir for about 5 minutes until the frog meat is cooked and firm, then turn off the heat.
After stir-frying, pour all the frog meat into the pot of porridge and stir well.
Note: If you are cooking porridge for a baby, make sure to remove all the frog bones before grinding to make the porridge softer and tastier. -
Stir-fried straw mushrooms
Place a pan on the stove, add 2 tablespoons of cooking oil, heat it up, then add the remaining minced garlic and onion to sauté until fragrant, then add the straw mushrooms and stir evenly, seasoning with 1 teaspoon of salt, stir for about 5 minutes until the mushrooms are cooked, then turn off the heat.
Once the mushrooms are cooked, pour them into the pot of porridge that is cooking on the stove.
-
Completion
Add 1 teaspoon of salt, 1 teaspoon of sugar, and 1 teaspoon of seasoning to the pot of porridge, stir well, cook for another 5 minutes, then add chopped green onions, adjust seasoning to taste, and turn off the heat.
Scoop the porridge into a bowl, when serving, sprinkle a little fried garlic and chopped pepper for added flavor.

How to choose fresh and delicious frog meat
- Good frogs are large, uniform in size, and have brownish-yellow skin. It is best to buy live frogs and process them immediately after cleaning to ensure the dish has a delicious flavor.
- If you cannot buy live frogs, you should purchase frozen frogs from reputable food stores or supermarkets.
- Avoid choosing frogs that look too fat, have black skin, large heads, and move quite sluggishly; these are farmed frogs, which have soft and mushy meat and are not as tasty as wild frogs.
How to choose delicious green beans
- You should choose beans that are of moderate and uniform size, not too large, and when squeezed, they should be firm and not easily breakable.
- Avoid selecting beans that have unusual colors, signs of mold or pests, or have a strange smell when sniffed.
How to clean frogs properly, without fishy smell
- Step 1: Skin and gut: Cut off the frog’s head, then skin it and remove all the internal organs. Next, remove the spine, using a sharp knife to scrape off all the tendons and blood vessels on the frog’s thighs. If you’re not used to it, you can ask the seller to help.
- Step 2: Wash the frog: Using alcohol mixed with crushed ginger to wash the frog will help eliminate the fishy smell very effectively. Additionally, you can use lemon and vinegar to wash the frog, but it is less effective than alcohol and ginger.
