How to prepare Green Bean Chicken Porridge

  • Prepare the ingredients

    To ensure the chicken is clean and not smelly, after buying, pluck out any remaining feathers and wash the chicken with diluted salt water.

    Then rinse it several times with water, drain, and cut the chicken into bite-sized pieces.

    Peel the shallots, wash them clean. Remove the roots from the scallions and cilantro, wash them clean, and chop them finely.

  • Marinate the chicken

    Put the prepared chicken into a bowl, add 1 tablespoon of seasoning, 1/2 tablespoon of salt powder, 1/3 teaspoon of pepper, and 1/2 tablespoon of turmeric powder, then mix well to let the chicken absorb the spices. Marinate the chicken for about 10 minutes.

  • Boil chicken

    Place a pot on the stove, bring 1 liter of water to a boil, add a few shallots to the pot, when the water boils, add the marinated chicken to the pot, cover and cook on medium heat for about 20 minutes.

    After the chicken is cooked, take the chicken out.

    Tip: To make the chicken more chewy and delicious, do not simmer the chicken with the porridge as it will make the meat mushy. After boiling the chicken, take it out.

  • Cook porridge

    Before cooking, soak the mung beans for about 2 hours and then rinse them clean!

    After taking the chicken out, add 50 grams of regular rice, 50 grams of sticky rice, and 50 grams of rinsed mung beans into the pot, cover and cook on medium heat for about 30 minutes.

    After 30 minutes, check if the rice is soft, then add the chicken back in, cook for an additional 15 minutes on medium heat until the chicken and porridge are fully soft.

    Before turning off the stove, you can season it to taste!

    When serving, scoop the porridge into a bowl, add some chopped green onions, cilantro, and pepper, and it’s ready to eat.

  • Prepare the Chicken

    You can buy live chicken to prepare, but to save cooking time, it’s better to buy pre-processed chicken!

    To eliminate the unpleasant smell of the chicken thighs, use a little salt to rub directly on the outer surfaces of the chicken, then pluck off any remaining feathers and wash thoroughly with water several times, then place in a basket to drain.

    Pick off the wilted and yellowing leaves of the Vietnamese coriander, then wash them thoroughly and let them drain.

    Put the bean sprouts into a bowl of diluted saltwater and soak for about 10 minutes, then rinse with water, place in a colander, and let them drain.

    Peel the outer skin of the shallots with a knife, wash them thoroughly, and slice them thinly.

    Rinse 1 bowl of rice (the rice bowl) with water twice to remove dirt, then soak in water for 15 minutes before cooking.

    Finally, for the mung beans, wash them thoroughly with water after purchasing and similarly soak them in water for 15 minutes before cooking the porridge.

  • Boiled Chicken

    Place a pot on the stove, add 1 tablespoon of cooking oil and thinly sliced shallots to sauté until fragrant. Then continue to pour 1 liter of water into the pot and bring to a boil to prepare for boiling the chicken.

    When the water is boiling, add 2 quartered chicken thighs that have been cleaned and boil for about 20 – 30 minutes. During the boiling process, keep the heat medium and continually use a ladle to remove the foam from the surface, and about every 10 minutes, turn the chicken once to ensure it cooks evenly.

    To check if the chicken is cooked, use a chopstick to poke the chicken thigh; if no red juice comes out, it means the chicken is done. Once the chicken is cooked, remove it onto a plate and let it cool!

  • Chicken porridge with mung beans

    After removing the chicken from the boiling pot, you will add the soaked rice and mung beans to the pot. Season with 1 teaspoon of seasoning and 1 tablespoon of salt to taste.

    Cook the porridge over medium heat for about 30 minutes, stirring every 5 – 10 minutes to ensure the porridge cooks evenly and does not burn at the bottom of the pot.

    You can adjust the consistency of the porridge by adding water and seasoning it again to match your and your family’s taste!

    Once the chicken has cooled on the plate, proceed to chop the chicken into bite-sized pieces. Then, place a little bean sprouts underneath the bowl, add the porridge along with some rice paddy herb and ground pepper on top to finish.

  • You can check the freshness of the beans by pressing your finger into a bean; if the bean is crispy, breaks easily but doesn’t create many small fragments, then it is good mung bean.
  • Fresh mung beans usually have a light, characteristic aroma. Avoid selecting beans that have a musty smell or any strange odor.
  • Avoid choosing beans with black spots, dull colors, or uneven sizes. Especially do not select mung beans that show signs of being eaten by pests or have many black stones.

How to clean chicken properly, without odor

  • Method 1: You can use a mixture of alcohol and sliced ginger, crush it and rub it all over the chicken meat. Then wash it thoroughly and let it drain.
  • Method 2: You can also add lemon to the water, soak the chicken in it for 15 – 20 minutes. After that, take it out, rinse it with cold water, and let it drain.
  • Method 3: Use white alcohol mixed with salt, then rub it all over the chicken and rinse it several times with water to ensure the chicken is really clean!
