Prepare the ingredients
To ensure the chicken is clean and not smelly, after buying, pluck out any remaining feathers and wash the chicken with diluted salt water.
Then rinse it several times with water, drain, and cut the chicken into bite-sized pieces.
Peel the shallots, wash them clean. Remove the roots from the scallions and cilantro, wash them clean, and chop them finely.

Marinate the chicken
Put the prepared chicken into a bowl, add 1 tablespoon of seasoning, 1/2 tablespoon of salt powder, 1/3 teaspoon of pepper, and 1/2 tablespoon of turmeric powder, then mix well to let the chicken absorb the spices. Marinate the chicken for about 10 minutes.

Boil chicken
Place a pot on the stove, bring 1 liter of water to a boil, add a few shallots to the pot, when the water boils, add the marinated chicken to the pot, cover and cook on medium heat for about 20 minutes.

Prepare the Chicken
You can buy live chicken to prepare, but to save cooking time, it’s better to buy pre-processed chicken!
To eliminate the unpleasant smell of the chicken thighs, use a little salt to rub directly on the outer surfaces of the chicken, then pluck off any remaining feathers and wash thoroughly with water several times, then place in a basket to drain.

Prepare other ingredients
Pick off the wilted and yellowing leaves of the Vietnamese coriander, then wash them thoroughly and let them drain.
Put the bean sprouts into a bowl of diluted saltwater and soak for about 10 minutes, then rinse with water, place in a colander, and let them drain.
Peel the outer skin of the shallots with a knife, wash them thoroughly, and slice them thinly.
Rinse 1 bowl of rice (the rice bowl) with water twice to remove dirt, then soak in water for 15 minutes before cooking.
Finally, for the mung beans, wash them thoroughly with water after purchasing and similarly soak them in water for 15 minutes before cooking the porridge.

Place a pot on the stove, add 1 tablespoon of cooking oil and thinly sliced shallots to sauté until fragrant. Then continue to pour 1 liter of water into the pot and bring to a boil to prepare for boiling the chicken.
When the water is boiling, add 2 quartered chicken thighs that have been cleaned and boil for about 20 – 30 minutes. During the boiling process, keep the heat medium and continually use a ladle to remove the foam from the surface, and about every 10 minutes, turn the chicken once to ensure it cooks evenly.
