Reasons for yogurt to become slimy

  • The yogurt starter is still cold or not thoroughly thawed, which will cause the yogurt to become slimy. It should be taken out of the refrigerator 30 minutes to 1 hour (2 – 3 hours for the freezer) to ensure the yogurt starter is just right.
  • The tools used to make yogurt were not thoroughly sterilized and were still wet, causing the yogurt to become contaminated, resulting in a slimy product.
  • The yogurt was incubated for too long at a temperature lower than 40 – 45 degrees Celsius. Usually, after 4 hours, the yogurt will set, but if left overnight at a low temperature, the yogurt will become slimy.
